Cheesy Chicken and Broccoli Shells

Cheesy Chicken and Broccoli Shells recipe | This easy-to-prepare Cheesy Chicken and Broccoli Shells is economical and delicious. It will quickly become a family favorite.

I’ve mentioned before that cheesy dishes tend to be hits in my house. This easy-to-prepare one is no exception.

Ingredients

  • 32 oz. chicken broth
  • 1 1/2 cups water
  • 16 oz. small shell pasta
  • 2 garlic cloves, minced
  • 2-3 cups frozen broccoli, partially thawed and chopped
  • 2 chicken breasts, cooked and cut into bite-size pieces
  • 2 cups homemade cheese sauce or 1 can (10 3/4 oz.) condensed cheese soup plus 5 oz. of milk
  • Several dashes of salt and pepper
  • 2 teaspoons paprika
  • 1 1/2 teaspoons onion powder

Instructions

In a Dutch oven or large saucepan, bring the chicken broth and water to a boil. Add the pasta and the garlic. Boil for 4 minutes, stirring occasionally. Add in the broccoli and chicken. Boil for an additional 4 minutes, stirring occasionally.

Reduce the heat to low and stir in the cheese sauce (or the condensed cheese soup and milk), salt, pepper, paprika, and onion powder. Simmer until thoroughly heated. Yield: 5 servings.

Notes

My husband is not a fan of broccoli, but he absolutely loves this dish. I’m so glad that its creamy texture and cheesy flavor somehow make the broccoli tolerable to him! If you cook the chicken and prepare the cheese sauce ahead of time (as I do at the beginning of each month that we use our winter menu), then it is a breeze to prepare.

Not only is this dish flavorful, but it is economical. The ingredients cost approximately $9.02, which is just $1.80 per serving.

Feel free to add other vegetables and seasonings when you try it in order to customize it to your family’s preferences!

    This looks delicious. I like that you don’t have to drain the pasta and that you are using chicken broth to add more flavor. Have you ever tried to make this dish with fresh broccoli?

      I haven’t, Patti, but I’m sure you can. Just cook it for an appropriate length of time (or steam it separately and add it at the end).
      And, yes, the chicken broth makes all the difference!
