April 2021 Dinner Menu

We’ve been enjoying some lovely weather around here. It’s still cooling off a bit overnight and the days are not too hot. We’re enjoying this weather while it lasts. With the calendar turning to April, I know it won’t last long! Another thing that won’t last is last month’s menu. It’s time for a new one!

What’s for dinner in my house during April 2021? Menu items include Bourbon Chicken, Fajita Quesadillas, and Peach Balsamic Chicken.

At the beginning of each month I plan out our dinners for the coming weeks (you can see past menus here). This takes a bit of time and effort, but once I’m finished, I have an entire month’s worth of dinners planned—I don’t have to meal plan each week! This saves me time and sometimes I’m even able to save a little money because I can make bulk purchases of the food items we’ll use numerous times. I don’t include breakfast or lunch on our menus because we keep things simple for these meals. For breakfast, we typically eat oatmeal, yogurt with fruit, toast and scrambled eggs, or homemade muffins. For lunch, we typically eat leftovers or easy-to-prepare meals like sandwiches or homemade macaroni and cheese.

Here are the tasty meals we will be eating during April 2021.

Days 1-7

  • Taco salad
  • Chicken broccoli Alfredo bake
  • Cheeseburger quesadillas, sliced fresh vegetables

Cheeseburger Quesadillas

  • Peach balsamic chicken, rice, green beans
  • Stuffed summer squash, garden salad
  • Soft tacos, corn
  • Veggie-rich creamy pasta primavera

Days 8-14

  • Layered roast beef salad
  • Spaghetti and meat sauce, green beans
  • Grilled chicken wraps, sliced fresh vegetables
  • Smoked sausage, seasoned rice, broccoli
  • Creamy turkey mushroom spaghetti, garden salad

  • Creamy tortellini spinach soup, garlic bread

Days 15-21

  • Chef salad
  • Spinach ravioli in butternut squash Alfredo, green beans
  • BLT quesadillas, sliced fresh vegetables
  • Chicken parmesan, broccoli
  • Creamy ground turkey and noodle casserole, garden salad

Days 22-30

  • Parmesan garlic tilapia, seasoned rice, air fryer asparagus

  • Grilled cheese, tomato soup
  • Mexican rice bake, tortilla chips
