We had a wonderful visit last month with my sister and her family. This month, my parents are coming for a visit. Our schedule is full, but our hearts are fuller!
Spring is most definitely underway around here. We’re transitioning from menus full of soups and casseroles to menus full of meals that don’t require use of the oven or standing over a hot stove for too long (you can see my previous menus here). Here are my selections for this month’s menu.
Days 1-7
- Chef salad
- Chicken parmesan, green beans
- BBQ pulled pork sandwiches, fresh veggies with ranch dip
- Soft tacos, corn
- Easy cheesy stroganoff, steamed broccoli
- Cheese tortellini in garden vegetable marinara sauce
- Honey apricot chicken, rice, sugar snap peas
Days 8-14
- Grilled chicken sandwiches, air fryer asparagus
- Black bean and veggie quesadillas
- Beef sausage, seasoned rice, side salad
- Chicken Alfredo, green beans
- Nachos
- Build-your-own sliders, fresh veggies with ranch dip
Days 15-21
- Easy French dip sandwiches, side salad
- Burrito bowls
- Ham, twice-baked potatoes, steamed broccoli
- Chicken drumsticks, fresh veggies with ranch dip
- Homemade macaroni and cheese, roasted summer vegetables
- Pizza, side salad
Days 22-30
- Salad bar
- Baked ziti, green beans
- Biscuit-topped country chicken and veggies
- Pico de gallo tilapia, black beans, rice
- White vegetable lasagna
- Sausage and potato country casserole, side salad
- Tortellini tomato soup, garlic bread
- Sloppy joe sandwiches, sweet potato fries, fresh veggies with ranch dip
- Breakfast for dinner

We have been very slowly been swapping out soups and casseroles for things like pasta salad and burgers and I am loving the transition into spring and summer. Your menu sounds so good!
