We were delighted to have two visits from family last month. The second visit was planned, but earlier in the month we had an unexpected visit that allowed my kids some time to play with one of their cousins. We enjoyed the fellowship and laughter from both visits!
This month we don’t have a lot planned outside of viewing the eclipse. We’re in Texas, so we will be in the path of totality. Hopefully clouds won’t obscure our view! Here are the dinners we plan to eat throughout the month (you can view past menus here).
Days 1-7

- Air fryer chicken fingers, fresh veggies with ranch dip
- Creamy mushroom pasta, air fryer asparagus
Days 15-21
- Chef salad
- Beefy tortellini skillet, green beans
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Pico de gallo tilapia, seasoned rice, black beans
- Nachos, corn
- Spicy lemon chicken, fresh veggies with ranch dip
- Italian tomato macaroni and cheese, steamed broccoli
Days 22-30
- Taco salad
- Chicken Florentine skillet
- Chicken club wraps, fresh veggies with ranch dip
- Lemon pepper chicken, buttered noodles, green beans
- Mexican rice bake, tortilla chips
- Air fryer BBQ chicken skewers, seasoned rice
- Veggie lasagna
- Easy French dip sandwiches, fresh veggies with ranch dip
