August 2020 Dinner Menu

This year has been so unusual that it doesn’t feel like it’s almost August, but the weather around here is enough to convince me that it is! Among other things, this means that it is time for a new dinner menu.

What’s for dinner in my house during August 2020? Menu items include Stuffed Pepper Skillet, Turkey Avocado BLT Sandwiches, and Mexican Rice Bake.

At the start of each month I plan our menu for the coming weeks (you can see our past menus here). This approach works for me because it means I don’t have to meal plan each week and I can often save a little bit of money by making bulk purchases of the foods we’ll use several times.

I only include dinners on our menus because we keep breakfast and lunch pretty simple. For breakfast, we generally eat things like oatmeal, yogurt with fruit, smoothies, or homemade muffins. For lunch, we typically eat dinner leftovers or easy-to-prepare things like almond butter sandwiches, homemade macaroni and cheese, or avocado egg salad.

We’re going to have a busy month because we plan to list our home for sale in a couple of weeks. Thus, I’m including many easy-to-prepare meals on our menu.

Days 1-7

One-pot savory chicken and rice, carrots

Days 8-14

Days 22-31

Cheesy sausage and rice skillet, broccoli
