Because we are approaching Valentine’s Day, I wanted to make my kids some festive ice cream. There are a number of flavors that many of us traditionally associate with Valentine’s Day, including the flavor of Black Forest Cake (chocolate cake with a rich cherry filling).
I integrated the flavor of this delicious dessert into an easy-to-prepare ice cream. Yum! We thoroughly enjoyed this one!
Ingredients
- 2 cups heavy cream
- 1 cup milk
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 2 cups frozen cherries, chopped into small pieces
- 2 chocolate cupcakes, coarsely crumbled and frozen
Instructions
In a bowl, mix together the cream, milk, sugar, and vanilla extract. Stir until the sugar dissolves. Place this mixture in your ice cream maker and churn according to the manufacturer’s instructions. Add in the cherries and cupcake crumbles once the ice cream begins to freeze. When the ice cream is done churning, place in an airtight, freezer-safe container and freeze until ready to serve. Yield: 6-8 servings.
Notes
It’s pretty hard to go wrong with chocolate and cherries! These two flavors go so well together. In this recipe, they give pops of sweet flavor to an otherwise mellow vanilla ice cream. In addition to chocolate flavor, the cupcake crumbles add little chewy morsels to the ice cream, creating a fun texture. As noted above, I recommend freezing the coarsely crumbled cupcakes before adding them to the ice cream so they remain in large crumbles instead of turning into tiny crumbs once you add them to the churning ice cream.
