Chicken Amandine

This comforting casserole is nutritious and easy to prepare. Its creamy texture and savory flavor will have your family asking for seconds!

We’re finally having days around here that are cool enough that we appreciate the heat that radiates from the oven when I use it! Here’s one baked dish—a simple, hearty casserole—that I prepared last month. We really enjoyed the flavor of this one!

Ingredients

(Inspired by this recipe.)

  • 1 medium onion, chopped
  • 1 tablespoon butter
  • ¾ cup uncooked long grain and wild rice
  • 2 ¼ cups chicken broth
  • 3 cups cubed cooked chicken
  • 2 cups frozen French-style green beans, thawed
  • 1 can (10 ¾ ounces) condensed cream of chicken soup, undiluted
  • ½ cup sour cream
  • ¾ cup sliced almonds
  • Several dashes salt and pepper
  • 1 teaspoon garlic powder
  • ¾ cup shredded parmesan cheese, divided

Instructions

In a medium saucepan, sauté the onion in the butter until tender. Add the rice and stir-fry for 3-4 minutes. Add the broth. Bring to a boil, then cover with a lid and reduce heat to low. Simmer for 25 minutes or until the broth is absorbed.

While the rice cooks, combine the chicken, green beans, soup, sour cream, almonds, salt, pepper, garlic powder, and ½ cup of the parmesan cheese in a large bowl. Once the rice is completed, gently stir it in with the chicken mixture.

Transfer to a greased 9×13 in. baking dish. Sprinkle with the remaining parmesan cheese. Bake at 350°F for 30-35 minutes or until heated through. Yield: 8 servings.

Notes

I love that this dish uses simple ingredients that I typically have on hand. It’s also easy to prepare! It has a rich savory flavor that is very comforting. My husband doesn’t like nuts of any kind, but he wasn’t bothered by the almonds in this. In fact, I don’t think he noticed they were there.

I’m hanging on to this recipe because it will be a great way to use leftover turkey after Thanksgiving. Though the recipe calls for chicken, turkey will work just fine or perhaps even better! I’m eager to find out.
