Chicken Cordon Bleu Soup

We had some ham left over after Christmas. I froze it in portions of various sizes and have been finding new recipes with which to use it. One recipe that caught my eye was for this Chicken Cordon Bleu Soup.

Get the classic flavor of Chicken Cordon Bleu in an easy-to-prepare soup! It contains hidden cauliflower to boost your family’s veggie consumption.

This soup contains cauliflower, so I knew I was taking a chance that my veggie-averse family might not like it. Guess what? They did like it! The cauliflower is pretty well hidden, which made this a great way to sneak a few extra nutrients into their diets.

Ingredients

(Adapted slightly from this recipe.)

  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 small head cauliflower, coarsely chopped
  • 1 medium onion, chopped
  • 1 garlic clove, minced
  • 3 tablespoons flour
  • 3 cups chicken broth
  • 2 cups shredded cooked chicken
  • 2 cups half-and-half cream
  • 1 cup cubed fully cooked ham
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 8 ounces Swiss cheese, shredded

Instructions

In a Dutch oven or large saucepan, heat the butter and oil over medium-high heat. Add the cauliflower and onion; cook and stir until crisp-tender, about 8-10 minutes. Add the garlic; cook 1 minute longer. Stir in the flour until blended; gradually whisk in the broth. Bring to a boil, stirring constantly; cook and stir until the cauliflower is tender, about 12-15 minutes.

Turn off the heat and allow the soup to cool slightly. Puree in batches in a blender or food processor; return to the pan. Turn on the heat to medium. Stir in the chicken, half-and-half, ham, mustard, salt, and pepper; stir occasionally until thoroughly heated. Stir in the cheese until melted. Yield: 6 servings.

Notes

This soup tastes just like classic chicken cordon bleu. Like I said above, I wasn’t sure if my family would like it because of the cauliflower. However, we couldn’t really taste the cauliflower. Because it was pureed, it simply made a creamy base for the soup. What we really tasted was the ham, chicken, and cheese. I hope your family likes it as much as mine did!

    Wow! This looks delicious! I love anything with cauliflower. That was a surprise (to me) ingredient in this soup. It makes it even more appealing!
