It’s not unusual for my 5-year-old to turn to me on Saturday night and ask if I’m going to bake something special for Sunday morning’s breakfast. It seems my kids have grown accustomed to having yummy muffins and other baked goods before we head to church! Sadly, I’m not always able to bake something special on Sundays, but last week I was able to make these delicious Chocolate Chip Cherry Muffins.
Ingredients
(Adapted from this recipe.)
- 2 cups flour
- 3/4 cup sugar
- 1 tablespoon baking powder
- 1/4 teaspoon salt
- 2 large eggs, room temperature
- 1/3 cup vegetable oil (I used avocado oil)
- 1 cup plain Greek yogurt or sour cream
- 1/3 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1 cup mini chocolate chips
- 1 cup fresh or frozen cherries, pitted and chopped (if using frozen, allow to thaw and then toss in 2 tablespoons flour after chopping)
Instructions
Preheat the oven to 400°F. Lightly grease a 12-hole muffin pan or fill it with muffin liners.
In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.
In another bowl, whisk together the eggs, oil, yogurt, milk, and extracts. Pour the wet ingredients into the dry ingredients; mix until just combined. Fold in the chocolate chips and cherries.
Divide the batter evenly between the 12 muffin cups. Bake for 16-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the muffins to cool for 5 minutes in the pan, then transfer to a wire rack to cool completely. Yield: 12 muffins.
Notes
These muffins are perfectly moist and bursting with the flavors of chocolate and cherries. What I love most about them is that they are not a muffin with a little bit of chocolate and cherries; they are chocolate and cherries with a little bit of muffin!
As is true of most things that contain chocolate, my girls love them. They each had a small bowl of yogurt and 1-2 of these for breakfast. My oldest then asked if she could have one for snack in the afternoon! Apparently these are great for both breakfast and snack. I think they would make a lovely addition to a brunch spread.
