I recently ate some waffles—traditionally a breakfast food—that were so rich and delicious that I think they may actually qualify as a dessert! I made these waffles using a waffle mix that my sister-in-law gave us for Christmas. We went through this mix pretty quickly, but the waffles were so good that I wanted more! I used the ingredients list on the back of the waffle mix canister and a regular waffle recipe to piece together this recipe that yields similar waffles.
I don’t care if you eat them for breakfast, for dessert, or anytime in between, but you really should try them because they are delicious!
Ingredients
For the raspberry sauce
- 2 cups frozen raspberries
- ½ cup water
- ¼ cup white sugar
- ½ teaspoon vanilla extract
- 2 teaspoons corn starch dissolved in 2 tablespoons water
- 1 tablespoon butter
For the waffles
- 1 ½ cups flour
- ½ cup sugar
- ½ cup unsweetened cocoa powder
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ¼ cups milk
- 2 eggs
- 6 tablespoons butter, melted
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
- Whipped cream (optional)
Instructions
For the raspberry sauce
In a small bowl, stir together the cornstarch and two tablespoons of water. Set aside. In a saucepan over medium heat, stir together the raspberries, water, and sugar. Heat the mixture to boiling, stirring often. Reduce the heat to medium-low, then stir in the vanilla and the cornstarch mixture. Simmer until the mixture has thickened. Add the butter and stir until it has completely melted. Remove the sauce from the heat and set aside.
For the waffles
Preheat the waffle iron. In a large mixing bowl, stir together the flour, sugar, cocoa powder, baking powder, and salt. Stir in the milk, eggs, butter, vanilla extract, and chocolate chips until just combined.
Spray the preheated waffle iron with non-stick cooking spray. Ladle the mix onto the hot waffle iron and cook until done. When ready to serve the waffles, place them on plates and drizzle them with the raspberry sauce. Top with whipped cream, if desired. Yield: 6-8 waffles, depending on the size of your waffle iron.
Notes
You can see why these waffles make a good dessert! They are super rich. Eating one is like eating a brownie in the shape of a waffle. The raspberries are a perfect complement to the chocolate flavor, though you could also top the waffles with strawberry sauce, melted chocolate, maple syrup, nut butters, etc. There are so many wonderful options!
They are rich and sweet, but you can cut back on how much sugar and cocoa powder are in the recipe if you don’t want a particularly sweet waffle that has an intense chocolate flavor. However, for a special treat, these are quite perfect! I’ll be making them again for Valentine’s Day because the colors and flavor are perfect for that holiday.
