When I try a new recipe, I never know for certain how well it will be liked by my family. Thankfully, when I tried this one last fall, it was a huge hit!
In addition to being tasty, this dish is easy to prepare and brimming with vegetables. This makes it an all-around winner in my house!
Ingredients
(Adapted from this recipe.)
- ⅓ cup butter
- 1 medium onion, chopped
- 1 cup chopped carrot
- 1 cup chopped celery
- 1 can (8.7 oz.) corn
- ½ cup flour
- 2 cups chicken broth
- 1 cup half-and-half
- Several dashes salt, pepper, and garlic powder
- 4 cups cooked, diced chicken
- Prepared biscuits
Instructions
Melt the butter in a Dutch oven or large, high-walled skillet over medium-high heat. Add the onion, carrot, and celery; sauté for 10 minutes or until the vegetables are nearly tender. Add the corn and sauté for an additional minute.
Add in the flour and continue cooking, stirring constantly for one minute. Reduce the heat to medium and stir in the chicken broth a little at a time. Once the chicken broth is fully integrated into the vegetable-flour mixture, stir in the half-and-half.
Continue cooking over medium heat, stirring frequently, until thick (about 5 minutes). Stir in the salt, pepper, and garlic powder. Add the chicken and allow to heat thoroughly before serving over split biscuits. Yield: 8 servings.
Notes
This dish has comfort written all over it! It reminds me of chicken pot pie. In fact, the recipe I adapted to make this dish calls for biscuits to be baked on top of the chicken and veggies. I’m not a fan of this approach because the undersides of the biscuits get soggy. We prefer placing our chicken and veggies on top of the biscuits, which allows us to eat them before they absorb all the liquid.
To suit your family’s flavor preferences, you can easily make changes to this recipe. You can add other veggies (peas, potatoes, green beans, etc.), use a different protein in place of the chicken, or stir some cheese into the dish.
