This dish came to mind a few weeks ago, so I decided to replace one of the items on our menu with it. I used to prepare Chicken Normandy using a simple recipe from an old cookbook (Favorite Brand Name One-Dish Recipes). That recipe requires use of the oven. We’ve had weeks and weeks of 100+ temperatures, so I wasn’t going to turn the oven on to make it! I decided to modify it so it can be prepared as a skillet meal.
It ended up turning out well! The flavor was the same, and both preparation and cleanup were easy because it was prepared in a single pan. This one will definitely be on our upcoming menus!
Ingredients
- 4 tablespoons butter
- 1 lb. ground chicken
- 1 medium onion, finely chopped
- ¼ cup flour
- 1 cup chicken broth
- 1 cup apple cider
- 8 oz. egg noodles
- 1 can (10.5 oz.) cream of chicken soup
- ¼ cup applesauce
- 1 teaspoon dried thyme
- Several dashes salt, pepper, garlic powder, and onion powder
- ¼ cup half and half
Instructions
Melt the butter in a Dutch oven or high-walled skillet, then add the ground chicken and chopped onion. Brown over medium heat. Once thoroughly cooked, stir in the flour so the meat becomes coated. Slowly pour in the chicken broth and apple cider while stirring constantly. Increase the heat to bring the liquid to a boil and add the egg noodles. Boil for 6 minutes, stirring occasionally.
Reduce the heat to low. Gently stir in the cream of chicken soup, applesauce, thyme, salt, pepper, garlic powder, and onion powder. Allow to warm for a few minutes, then stir in the half and half before serving. Yield: 5 servings.
Notes
Despite its nondescript appearance, this dish had a wonderful savory-sweet flavor. Though my husband typically hates cooked fruits (such as in pies or cobblers), he liked this dish. I’m also a fan of the flavor, but what I really appreciated was that I only had to clean one pan after preparing this!
