I usually plan our meals in advance, but on occasion I have to whip something together without prior planning. When this happens, it may or may not turn out well. Thankfully, this Easy Sausage and Potato Skillet—one of these spur-of-the-moment meals—was both flavorful and filling.
Ingredients
- 1 lb. ground sausage (I used turkey Italian sausage)
- 1 medium onion, diced
- 2 tablespoons vegetable oil (I used avocado oil)
- 4 medium potatoes, peeled and chopped
- A few dashes of salt and pepper
- A few dashes of other seasonings, optional (I used garlic powder, onion powder, and a dash of red pepper flakes)
- 1 cup milk
- 2 tablespoons flour
- 1 cup shredded cheese (I used half mozzarella and half parmesan)
Instructions
Place the sausage and onion in a skillet over medium heat. Crumble the sausage and cook until browned. Remove from the pan and set aside. Add the oil to the pan. Add the potatoes once the oil is hot. Season with the salt, pepper, and other seasonings. Fry the potatoes, flipping every 4-5 minutes, until their insides are tender and their outsides are golden.
While the potatoes are cooking, whisk the flour into the milk. When the potatoes are done, return the sausage to the skillet and reduce the heat to medium-low. Add the milk to the skillet; cook until thickened, stirring frequently. Sprinkle with the shredded cheese and turn off the heat. Serve once the cheese has melted. Yield: 5 servings.
Notes
There are several things to love about this dish. It is super easy to prepare and cleanup is a breeze because it is prepared in one dish. It only uses a few ingredients, but it is filling and tasty. It’s not fancy, but it is great for busy nights when you need to quickly get something on the table that your family will actually like eating.
There are lots of little ways you can modify this recipe so it suits your family’s preferences. You can use different types of sausage, sprinkle it with different types of cheese, add veggies (bell pepper, mushrooms, etc.), or season it differently.

This looks like what my husband wants to make for supper tonight, except he uses chunks of beef instead of sausage. He calls it hash. It’s not my favorite but it’s good the first time around anyway. 🙂 Thanks for sharing! You’ve got me looking forward to tonight’s meal instead of dreading it. lol.

This is a great recipe. I added bacon with the sausage. Also a bag of frozen corn, black beans and onion with bell pepper in it. Turned out super good.
