January zoomed by! Though it’s still a few weeks away, we’re busy making plans for a spring break trip to visit with some family. My girls will get to see their cousins on my side of the family for the first time in three years! I’m thrilled for them, and I’m also excited to get to see my sister and her husband.
Though I’m eager for that trip, I’m in no hurry for spring to arrive. I love the cooler weather we’ve been having! I’m going to enjoy it fully because it might as well be summer once March begins here in southeast Texas. Here are the tasty meals we’ll enjoy along with the cool temperatures this month.
Days 1-7
- Chicken drumsticks, fresh veggies with ranch dip
- Creamy veggie tortellini soup
- Chef salad
- Mexican rice bake, tortilla chips
- Creamy garlic meatballs over egg noodles, green beans
- Grilled cheese sandwiches, tomato soup
- Chicken broccoli Alfredo casserole
Days 8-14
- French dip sandwiches, fresh veggies with ranch dip
- Tuscan chicken orzo, steamed broccoli
- Pico de gallo tilapia, black beans, seasoned rice
- Cheesy sausage and pepper pasta, green beans
- Slow cooker southwest chicken over rice
- Spinach tortellini in Alfredo sauce, side salad
- Air fryer chicken fingers, sweet potato fries, sugar snap peas
Days 15-21
- Taco macaroni and cheese, side salad
- Air fryer steak bites, seasoned rice, steamed broccoli
- Chef salad
- Portobello ravioli in creamy tomato sauce, green beans
- Pumpkin chili
- Chicken fajitas, corn
Days 22-28
- Creamy ground turkey and noodle casserole, side salad
- Maple bourbon chicken breasts, sugar snap peas
- Chicken bacon ranch sandwiches, fresh veggies with ranch dip
- Four-cheese macaroni and cheese, air fryer asparagus
- Soft tacos, corn
- Slow cooker creamy tortellini spinach soup
