January absolutely flew by! Aside from a brief visit from some good friends, our month was routine. However, these routine activities were enough to keep us busy!
We don’t have plans for anything unusual this month. Given it won’t last much longer, we’ll get outside quite a bit to enjoy the cold weather. We’ll also bake some special treats for Valentine’s Day. Here are the dinners we plan to eat during this (hopefully) low-key month (you can see past menus here).
Days 1-7
- Ham, mashed potatoes, green beans
- Easy tortellini tomato soup, garlic bread
- Nachos, corn
- Quick and tangy beef stir-fry, basmati rice
- Spaghetti with meat sauce, green beans
- Country chicken and vegetables over biscuits
- Creamy turkey mushroom spaghetti, glazed carrots
Days 8-14
- Pork ribs, seasoned rice, fresh veggies with ranch dip
- Homemade macaroni and cheese, steamed broccoli
- Pico de gallo chicken, Spanish rice, black beans
- Slow cooker bourbon chicken, basmati rice, green beans
- Chicken and broccoli Alfredo bake
- Shepherd’s pie
- Creamy ground turkey and noodle casserole, sugar snap peas
Days 15-21
- Vegetable lasagna
- Sausage and potato country casserole, green beans
- Lemon pepper chicken, buttered noodles, fresh veggies with ranch dip
- Cheesy sausage and pepper pasta
- Soft tacos, corn
- Slow cooker beef and broccoli, basmati rice
- Superior chicken noodle soup
Days 22-28
- Mexican rice bake, tortilla chips
- Maple bacon chicken, fresh veggies with ranch dip
- Creamy veggie tortellini soup
- Peach balsamic chicken, basmati rice, green beans
- Chicken Florentine skillet
- Breakfast for dinner
- Chicken noodle casserole, glazed carrots
