January was pretty uneventful for us. We continued doing school, learning about our new community, and trying to form new routines. One unexpected and fun thing that did happen was a rare snowfall! We don’t see snow that often here, so my girls were thrilled to be able to play in it.
We don’t have any special plans for this month. I may try to make some festive treats for Valentine’s Day, but otherwise it should be routine. Here are the dinners we plan to eat (you can see past menus here).
Days 1-7
- Creamy ground turkey and noodle casserole, green beans
- Grilled chicken tenders, fresh veggies with ranch dip
- Creamy mushroom pasta, sugar snap peas
- Baked Mediterranean tilapia, roasted root vegetables
- Peach balsamic chicken, basmati rice, side salad
Days 8-14
- Sausage and potato country casserole, fresh veggies with ranch dip
- Soft tacos
- Italian wedding soup
- Ranch chicken and veggies sheet pan dinner
- Beefy tortellini skillet, Ceasar salad
- Pesto chicken, garlic parmesan mashed cauliflower and potatoes
- Sausage and rice skillet, green beans
Days 15-21
- Philly cheesesteak casserole, fresh veggies with ranch dip
- Mexican pizzas, corn
- Turkey and wild rice soup
- Air fryer brown sugar garlic salmon, seasoned rice, side salad
- Cheesy sausage and pepper pasta
- Garlic herb chicken with sautéed vegetables
- Stuffed pepper skillet
Days 22-28
- Chicken noodle casserole, glazed carrots
- Mexican rice bake, tortilla chips
- Lemon pepper chicken, buttered noodles, air fryer parsnips
- Creamy Ceasar chicken pasta, green beans
- Chef salad
- Slow cooker bourbon chicken, basmati rice, steamed broccoli
