January went smoothly for us. Much to our delight, it snowed! When it does snow here, it usually melts quickly, so we were especially thrilled that it stuck around for a couple of days. We had numerous snowball fights, built snowmen, and piled a bunch of the snow up to create a ramp my kids could slide down. It was fantastic!
We’re hoping the cool temps will stick around for a bit so we can continue to enjoy crisp air through February. We’ll see how that works out. Beyond our usual activities and obligations, we don’t have much on the calendar for the month. Hopefully this means we’ll have a calm, routine few weeks. Here are the meals we intend to eat (you can see past menus here).
Days 1-7
- Chicken and wild rice casserole, green beans
- Pico de gallo chicken, seasoned rice, black beans
- Cheesy sausage and pepper pasta
- Chicken wings, fresh veggies with ranch dip
- Creamy Mediterranean chicken over buttered noodles
- Shepherd’s pie
Days 8-14
- Creamy ground turkey and noodle bake, green beans
- Soft tacos, corn
- Creamy Caesar chicken pasta, steamed broccoli
- Smoked beef sausage, seasoned rice, roasted carrots
- Thai yellow chicken curry with potatoes and carrots, basmati rice
- Sloppy joe sandwiches, fresh veggies with ranch dip
Days 15-21
- Chicken enchilada soup
- Baked ziti, steamed broccoli
- Mexican rice bake, tortilla chips
- Creamy Cajun chicken pasta, green beans
- Chicken wings, fresh veggies with ranch dip
- Lemon garlic shrimp, buttered noodles, Caesar salad
- Balsamic-glazed chicken, mashed potatoes, roasted carrots
Days 22-28
- Sausage and potato country casserole, green beans
- Creamy garlic meatballs over noodles, garden salad
- Lemon pepper chicken, seasoned rice, roasted carrots
- Slow cooker beef and broccoli, basmati rice
- Chicken fajitas
