I feel like January just began, yet here we are in February. We kept busy last month with school and homeschool group. This last week has been a treat for us because we, like so many others across the US, had a winter storm. After an initial coating of ice, we had quite a bit of sleet and then a little snow. My girls were able to do two of their favorite things: have snowball fights and build snowmen.

This month should be routine for us. My girls are looking forward to their Valentine’s Day party with homeschool group. They are already working on their handmade valentines (you can see what they made last year here). Otherwise, we’ll be doing our usual tasks interspersed with lots of outdoor play while the weather is still cool. Here are the dinners we plan to eat this month (you can see past menus here).
Days 1-7
- Philly cheese meatloaf, roasted carrots
- Mexican rice bake, tortilla chips
- Grilled cheese sandwiches, tomato soup

Days 8-14
- Chicken pot pie soup
- Creamy garlic meatballs over mashed potatoes, green beans
- Beefy tortellini skillet, roasted broccoli
- Sausage-stuffed acorn squash
- Leftovers
Days 15-21
- Bourbon chicken, basmati rice, green beans
- Sausage and potato country casserole, sugar snap peas
- Easy chicken Normandy skillet, glazed carrots
- Pizza, Caesar salad
- Leftovers
Days 22-28
- Sausage and root veggie sheet pan dinner, seasoned rice
- Shepherd’s pie
- One-pot chicken and sausage bog
- King Ranch chicken, corn
- Tuna noodle casserole, roasted carrots
- Leftovers
