Because they are easy to prepare and my oldest kids enjoy them, we sometimes have pancakes as part of lunch. Plain pancakes can get a little boring, but we’re anything but bored because there are innumerable ways to prepare pancakes! Because it is autumn, we are integrating several fabulous fall flavors into our pancakes.
In the past, I’ve been a stickler for preparing homemade foods. I still prefer this, and I make homemade versions as much as I can. However, trying to balance everything that I need to get done is difficult, so I sometimes rely on shortcuts. One shortcut is pancake mix. These fall pancakes are easy to prepare because they utilize Krusteaz Complete Pancake Mix.
I prepared all four of these on a single day. I labeled them with letters and had my kids rank them from their favorite to their least favorite. I’ll share their rankings after the recipes.
Fabulous fall pancake recipes
Prepare all the pancakes using the following approach:
- Heat a pancake griddle or pan to 375°F (medium heat).
- Place the pancake mix and other ingredients in a medium bowl. Whisk together.
- Lightly grease the hot griddle or pan. Pour approximately ¼ cup batter onto the griddle or pan for each pancake. Cook 1 to 1 ½ minutes per side. Flip each pancake only once, after the top of the pancake bubbles and the bottom is golden brown.
- Serve with your preferred topping(s). Each recipe yields about a dozen 4-inch pancakes.
Apple cider pancakes
- 2 cups pancake mix
- 1 ⅓ cups apple cider
- A couple dashes of ground cinnamon
- Fall leaf sprinkles (optional)
Sweet potato pancakes
- 2 cups pancake mix
- 1 ⅓ cups water
- ⅔ cup pureed sweet potato
- A couple dashes ground cinnamon
- Orange and gold sprinkles (optional)
Pumpkin spice pancakes
- 2 cups pancake mix
- 1 ⅓ cups water
- ⅔ cup pureed pumpkin
- A couple dashes ground cinnamon
- A dash of ground nutmeg and ground ginger
- Pumpkin sprinkles (optional)
Pear spice pancakes
- 2 cups pancake mix
- 1 cup water
- ⅔ cup pureed pear
- A couple dashes ground cinnamon
- A dash of ground nutmeg and ground ginger
- Green jimmies (optional)
Notes
The house smelled great as I was cooking these! My kids were definitely ready to eat once I finished them. They thought it was fun to be able to try the different varieties and rank them. My oldest kids ranked them as follows:
- Apple cider
- Sweet potato
- Pumpkin
- Pear
- Sweet potato
- Apple cider
- Pear
- Pumpkin
I liked all the flavors, but the sweet potato and apple cider were my favorites. In the interest of full disclosure, I did make a fifth flavor (butter pecan). None of us really liked it. I chose not to share it here because it was so bland.
