As I did in the fall, winter, and spring, I recently prepared pancakes with seasonal flair. My summer flavors were blueberry, peach, coconut pineapple, and cherry chocolate chip.

I’ve been utilizing a shortcut when preparing these seasonal pancakes: Krusteaz Complete Pancake Mix. Though I prefer making pancakes from scratch, this shortcut allows me to get breakfast or lunch on the table for my family with less stress.
I made all four of these pancake varieties for a single lunch. I assigned a letter to each so that my kids could rank the flavors. You can see their rankings below the recipes.
Splendid summer pancake recipes
Prepare all the varieties using the following approach:
- Heat a pancake griddle or pan to 375°F (medium heat).
- Place the pancake mix and other ingredients in a medium bowl. Whisk together.
- Lightly grease the hot griddle or pan. Pour approximately ¼ cup batter onto the griddle or pan for each pancake. Cook 1 to 1 ½ minutes per side. Flip each pancake only once, after the top of the pancake bubbles and the bottom is golden brown.
- Serve with your preferred topping(s). Each recipe yields about a dozen 4-inch pancakes.
Blueberry pancakes
- 2 cups pancake mix
- 2 tablespoons sugar
- 1 ¼ cups water
- 1 teaspoon vanilla extract
- ⅔ cup fresh blueberries (or frozen blueberries that have been thawed)

Peach pancakes
- 2 cups pancake mix
- 2 tablespoons sugar
- ¾ cup water
- ½ cup sour cream
- ⅔ cup pureed or mashed peach
- 1 teaspoon vanilla extract

Coconut pineapple pancakes
- 2 cups pancake mix
- 1 cup coconut milk
- 1 can (8 oz.) crushed pineapple
- 1 teaspoon vanilla extract

Cherry chocolate chip pancakes
- 2 cups pancake mix
- 1 ¼ cups water
- ⅔ cup diced sweet cherries (fresh or frozen ones that have been thawed)
- ½ cup mini chocolate chips
- 1 teaspoon vanilla extract

Here’s how my oldest kids ranked these summer pancakes:

I had a difficult time choosing a favorite. The blueberry and the peach were both fantastic, followed closely by the cherry chocolate chip. As you can see, none of us really liked the coconut pineapple. I believe this is due to the texture of the pancakes. The presence of crushed pineapple means the pancakes weren’t particularly smooth. This was true of the blueberry, as well. However, unlike the pineapple, the blueberries in the pancakes were really soft and gave you a pop of juice and flavor when bitten.
We have lots of leftover pancakes in the fridge right now, but I will definitely be looking back at this post to prepare a few of these again when we run out. What flavors of pancakes do you love to eat during the summer?
