As far as appetizers and snacks are concerned, spinach artichoke dip isn’t that unhealthy. After all, it contains a couple of veggies! However, you consume about a billion calories when you eat traditional varieties of it, so I’ve been tinkering with my spinach artichoke dip recipe in order to decrease how many calories it contains and increase how many nutrients it contains.
This version contains fewer calories, less fat, more protein, and more vegetables than traditional spinach artichoke dips. Thankfully, you won’t be thinking about this because it tastes so good!
Ingredients
- 8 oz. Neufchatel cheese, warmed to room temperature
- ½ cup non-fat plain Greek yogurt
- ½ cup mayonnaise
- 1 can (14 oz.) artichoke hearts, drained and chopped
- ¾ cup frozen spinach, thawed and liquid squeezed out
- ½ cup frozen riced cauliflower, thawed
- 1 clove garlic, minced
- ¾ cup plus ¼ cup grated parmesan cheese, divided
Instructions
Preheat the oven to 350°F. In a mixing bowl, thoroughly combine the Neufchatel cheese, Greek yogurt, and mayonnaise. Gently stir in the artichoke hearts, spinach, cauliflower, garlic, and ¾ cup of the parmesan cheese.
Place in a lightly greased baking dish. Sprinkle with the remaining parmesan cheese. Bake in the preheated oven for about 20 minutes or until hot and bubbly. Serve warm with tortilla chips, crackers, or bread. Yield: 8 servings.
Notes
This dip is absolutely delicious! It does taste slightly different from spinach artichoke dip that is prepared without the cauliflower and with sour cream and regular cream cheese. However, the difference is subtle. It’s only obvious when performing a side-by-side comparison of the two.
I like to eat tortilla chips with this dip, but it’s also great with Wheat Thins, pita chips, toasted bread, and various veggie sticks! It reheats well, so you can be confident about keeping leftovers (if you have them!) and snacking on these later.
