Italian Sausage Bruschetta | Italian sausage bruschetta looks and tastes sophisticated, but is very easy to make. Serve it at a party or use it to make an everyday dinner feel special.

I love when I create a dish that looks and tastes sophisticated, but is very easy to make. Italian sausage bruschetta is definitely one of these dishes. It’s perfect to serve at parties or it can be used to make an everyday dinner feel special.

Ingredients

  • 2 mild or spicy Italian sausage links, casings removed
  • 1 cup Pomi diced tomatoes or ½ of a can (14.5 oz.) diced tomatoes
  • Salt and pepper
  • 8 slices of Italian bread
  • Olive oil
  • 1 1/2 cups shredded mozzarella cheese
  • Parsley flakes (optional)

Instructions

Preheat the oven broiler. Brown the sausage in a skillet over medium heat, breaking up the links as they cook. Add the diced tomatoes and a dash of salt and pepper. Simmer over low heat while you prepare the bread.

Place the bread slices on a baking sheet and lightly toast the exposed side under the broiler.

Turn the bread slices over and brush the non-toasted sides with olive oil. Cover each slice with the Italian sausage mixture and top with mozzarella cheese. Sprinkle with parsley flakes (if desired).

Place under the broiler until the cheese melts and begins to toast. Serve hot. Yield: 2-3 servings (meal) or 4-6 servings (appetizer).

Notes

This bruschetta can be prepared quickly and easily. The Italian sausage gives it a rich, savory flavor. I’ve been serving it with a veggie on the side as a meal, but it also makes a great appetizer.

The ingredients for this dish cost $4.06, which is just $1.35 per serving (when consumed in 3 servings). If served with a vegetable such as green beans, the cost increases to $1.52 per serving. Give it a try!
