Ready or not, it’s January of 2020. I hope you and your family had a wonderful time celebrating Christmas and the New Year. We did. Now we’re returning to our normal routine, which includes having a dinner menu planned out for the month.
At the start of each month I plan out our dinners for the coming weeks (you can see past menus here). Though it takes a bit of time and effort to do this, it is beneficial for my family because it saves us time (I don’t have to menu plan on a weekly basis) and it saves us money (I’m able to make bulk purchases of foods we use numerous times).
I only include dinners on our menus. We typically eat leftovers or simple things like cheese broccoli soup, almond butter sandwiches, or homemade macaroni and cheese for lunch. We typically eat oatmeal, scrambled eggs and toast, or cold cereal for breakfast.
Here are the tasty dinners we will eat during January 2020.
Days 1-7
- Gnocchi with spinach and chicken sausage, side salad
- Cheeseburger quesadillas, carrots
- Chicken and wild rice casserole, peas
- Shepherd’s pie
- Slow cooker creamy tortellini spinach soup
- Mexican rice bake, tortilla chips, corn with red and green bell peppers
- Lemon pepper chicken sheet pan dinner
Days 8-14
- Spaghetti and meat marinara, green beans
- Chicken quesadillas, corn with red and green bell peppers
- One pot savory chicken and rice, peas
- Cheeseburger casserole, carrots
- Superior chicken noodle soup
- Baked chicken fried steaks, baked potatoes, green beans
- Roasted chicken, cheesy rice, carrots
Days 15-21
- Chicken Alfredo, green beans
- Philly cheesesteak quesadillas, carrots
- Turkey and wild rice casserole, peas
- Shepherd’s pie
- Cheesy ham chowder
- Slow cooker bourbon chicken over rice, green beans
- Super easy beef and rice casserole, carrots
Days 22-31
- Cheesy sausage and pepper pasta, green beans
- Cuban quesadillas, carrots
- Cheesy chicken and broccoli rice
- Sloppy joe casserole, peas
- Chicken and rice soup
- Smoked sausage, homemade macaroni and cheese, green beans
- Philly cheese meatloaf, carrots
- Breakfast for dinner (waffles, scrambled eggs, etc.)
- Spinach and cheese lasagna rolls, green beans
- Southwest cheesy chicken sandwiches, carrots

Everything looks delicious! I am cleaning out our freezer and pantry this month, using things up and getting my garden plan ready so I can restock with fresh garden goodies this summer 🙂
