January 2022 Dinner Menu

The arrival of 2022 was far from a surprise, yet I still find myself scrambling to get things done! On the day before New Year’s Eve, I realized we didn’t have a 2022 calendar to replace the 2021 version that we keep on the front of our fridge. We didn’t get one ordered until yesterday, so we’re still waiting on it. Similarly, I’m a couple of days late getting my menu finished.

What’s for dinner in my house during January 2022? Meals include Tuscan Tortellini Skillet, Red Beans and Rice, and Creamy Mediterranean Chicken.

Nevertheless, here’s the menu! If you’d like to see past menus, you can view them here. We anticipate that this month will be nice and quiet as we recover from the busy holidays. I hope 2022 is off to a good start for you and that you experience many blessings this year!

Days 1-7

  • Taco salad
  • Creamy Cajun Chicken Pasta, green beans

  • Chicken and wild rice casserole, sugar snap peas
  • Beef tips over noodles, side salad
  • Bourbon chicken over rice, green beans

  • Hamburgers, fresh veggies with ranch dip

Days 8-14

  • Creamy ground turkey and noodle casserole, green beans

  • Philly cheesesteak quesadillas, side salad

    I seem to be having the same issue; I took that week between Christmas and New Years to really just relax and I find I am feeling caught off guard by the start of the new year and the new month. Your menu sounds so good!
