I had to pause just now when typing “2023” because I’m not used to the new number! It always takes me a few weeks (sometimes months) to adjust after we start a new year.
We turned the page to 2023 without much fanfare. We didn’t do anything in particular to celebrate, and our Christmas celebration the previous week was subdued because the family members visiting us were sick. Nevertheless, we had a nice holiday and are curious to see what the New Year holds for us. Here are the dinners I plan for us to eat this month (you can view past menus here).
Days 1-7
- Burrito bowls
- Sausage and potato country casserole, green beans
- White chicken chili
- Hamburger casserole, fresh veggies with ranch dip
- Tortellini tomato soup, garlic bread
- Lemon pepper chicken, buttered noodles, steamed broccoli
Days 8-14
- Cornbread topped BBQ bake, fresh veggies with ranch dip
- Peach balsamic chicken, rice, green beans
- Homemade cheeseburger macaroni, glazed carrots
- Ravioli casserole, Caesar salad
- Air fryer steak bites, fresh veggies with ranch dip
- Creamy Cajun chicken pasta, sugar snap peas
Days 15-21
- Mexican rice bake, tortilla chips
- Chicken drumsticks, fresh veggies with ranch dip
- Creamy garlic meatballs over egg noodles, green beans
- Soft tacos, corn
- Lasagna soup
- Dump-and-bake jambalaya
Days 22-31
- Garlic mushroom chicken, mashed potatoes, steamed broccoli
- Meatloaf parmesan, green beans
- Minestrone soup
- Chicken Florentine skillet
- Supreme burritos, corn
- Beefy tortellini skillet, side salad
- Grilled cheese, tomato soup
- Cider-glazed chicken, seasoned rice, air fryer parsnips
- Breakfast for dinner

Sorry to hear your family celebrations were a bit subdued this year due to illnesses; I think this is the first year where I can remember that everyone we saw at each party was actually healthy (and I was so thankful since we spent almost all fall with someone sick from something!). This sounds like you have a delicious month planned.
