Because of the changes to our schedule brought on by the pandemic, half of the time I don’t know what day of the week it is. Likewise, sometimes I don’t even remember what month it is! When I sat down to work on our grocery list about a week ago, I realized it was a new month and I needed a menu.
At the beginning of each month I plan our dinner menu for the coming weeks (you can see our past menus here). I like this approach because it alleviates the need for me to meal plan each week and I can save a little money by making bulk purchases of the foods we’ll use several times.
I only include dinners on our menus because we keep things pretty simple for breakfast and lunch. For breakfast, we typically eat things like yogurt with fruit, oatmeal, scrambled eggs with toast, or homemade muffins. For lunch, we typically eat dinner leftovers or easy-to-prepare things like almond butter sandwiches, cheese broccoli soup, or avocado egg salad.
We’re seeing higher grocery prices around here, so I’m really focusing on economical meals. We’ve also been busy getting our house ready to list for sale, so I’m trying to stick to easy-to-prepare dinners.
Days 1-7
- Cheesy sausage and pepper pasta, green beans
- Salad, breadsticks
- Panang curry with chicken and veggies, rice
- Pizza rolls, carrot sticks
- Creamy ground turkey and noodle casserole, green beans
- Meatloaf, mashed potatoes, carrots
- BBQ chicken sandwiches, fries, veggie sticks
Days 8-14
- Chicken broccoli Alfredo bake
- Soft tacos, corn with red and green bell pepper
- Slow cooker red beans and rice
- Southwest cheesy chicken sandwiches, carrot sticks
- Turkey Normandy, green beans
- Beef and mushroom noodle bake, carrots
- Chicken lettuce wraps, veggie sticks
Days 15-21
- Spaghetti and meat sauce, green beans
- Salad, breadsticks
- Bourbon chicken over rice, peas
- Grilled cheese sandwiches, tomato soup, carrot sticks
- Easy cheesy stroganoff, green beans
- Seasoned hamburger steaks, potato wedges, carrots
- Turkey club wraps, veggie sticks
Days 22-31
- Chicken Alfredo, green beans
- Taco salad
- Veggie-rich chicken and wild rice casserole
- Cheeseburger quesadillas, carrot sticks
- Philly Cheesesteak Casserole, green beans
- Creamy garlic meatballs, carrots
- Roast chicken, cheesy rice, green beans
- Breakfast for dinner
- Nachos, corn with red and green bell pepper
- Minestrone soup, breadsticks
