Summer has arrived and it is hot, hot, hot around here. We’re keeping cool by eating lots of popsicles! Like I did last month, I’ve planned meals that don’t require the oven to prepare. Everything on this menu can be prepared on the stove, in the air fryer, or in the slow cooker.
As each new month begins, I take time to plan out our dinners for the coming weeks (you can view many of my past menus here). I prefer this approach because it means I don’t have to take time to meal plan each week. Additionally, I’m sometimes able to save a little money by purchasing bulk quantities of the foods I know I’ll use multiple times during the month. I only plan our dinners because we keep things simple for breakfast and lunch. For breakfast, we eat things like oatmeal, fruit with yogurt, and homemade muffins. For lunch, we eat leftovers or simple things like ham and cheese sandwiches.
Here are the tasty meals I plan to prepare during July 2021.
Days 1-7
- Chef salad
- Creamy Cajun chicken pasta, green beans
- Nachos, corn with red and green bell pepper
- Sausage and rice skillet, broccoli
- Slow cooker creamy Italian chicken over egg noodles, green beans
- Southwest cheesy chicken sandwiches, carrot sticks
- BBQ country ribs, baked beans, side salad
Days 8-14
- Chicken lettuce wrap salad
- Spaghetti with meat sauce, green beans
- Burrito bowls
- One-pot savory chicken and rice, glazed carrots
- Philly cheesesteak sandwiches, veggie sticks
- BBQ chicken and sausage over rice, corn
- Pico do gallo tilapia, seasoned rice, broccoli
Days 15-21
- Chef salad
- Chicken Alfredo penne, green beans
- Mexican rice bake, tortilla chips
- Chicken and sausage bog, broccoli
- Chicken club wrap, veggie sticks
- Spicy lemon chicken over rice, green beans
- BBQ meatballs, macaroni and cheese, side salad
Days 22- 31
- Taco salad
- Cheesy sausage and pepper pasta, green beans
- Soft tacos, corn with red and green bell pepper
- Creamy garlic meatballs over egg noodles, asparagus
- Cajun sausage and rice skillet
- Cheeseburger quesadillas, carrot sticks
- Veggie-rich slow cooker meatball tortellini
- Air fryer chicken fried steak, seasoned rice, broccoli
- Chicken and noodles, side salad
- Breakfast for dinner
