We are sweltering down here on the Texas Gulf Coast! We’ve had many days of triple-digit heat. It’s not unusual for us to have temps this high in July and August, but June is a little early! Unless my girls are running through the sprinkler, we limit our outdoor activities to the tiny slip of time between dinner and bedtime (it’s still hot at this time—in the 90s—but at least the sun isn’t beating down). We’re also keeping cool with popsicles.
I try to minimize how much I use the oven during the summer. After all, the last thing we need to do is add heat to the house! There are only a couple of meals on this menu that require an oven. I will modify these so I prepare them using the stove or air fryer instead. Here are the dinners we plan to eat this month (you can view previous menus here).
Days 1-7
- Chef salad
- Tuscan tortellini skillet, green beans
- Slow cooker maple soy chicken, basmati rice, sugar snap peas
- Air fryer steak bites, fresh veggies with ranch dip
- Creamy mushroom pasta, steamed broccoli
- Creamy garlic meatballs over egg noodles, side salad
Days 8-14
- Taco salad
- Creamy Caesar chicken pasta, steamed broccoli
- Slow cooker bourbon chicken, green beans
- Air fryer chicken fingers, slow cooker baked beans, honey-glazed carrots
- Build-your-own sliders, fresh veggies with ranch dip
- Bean and cheese burritos, corn
- Beefy tortellini skillet, Caesar salad
Days 15-21
- Chef salad
- Creamy Cajun chicken pasta, green beans
- Slow cooker bourbon BBQ chicken tacos, corn
- Air fryer ham and cheese pockets, fresh veggies with ranch dip
- Cheeseburger quesadillas, honey-glazed carrots
- Italian tomato macaroni and cheese, side salad
- Homemade cheeseburger macaroni, fresh veggies with ranch dip
Days 22-31
- Slow cooker orange chicken, air fryer asparagus
- Air fryer BBQ chicken skewers, fresh veggies with ranch dip
- Chicken club wraps, potato salad, corn
- Black bean and veggie quesadillas
- Lemon pepper chicken, buttered noodles, roasted summer vegetables
- One-pot savory chicken and rice, green beans
- Breakfast for dinner
