We had a fun, eventful June! We traveled to Colorado for a week-long visit with family. My kids really enjoyed the time with their cousins. Traveling is particularly challenging for us because my youngest child, who is autistic, greatly values her routines. This trip was a bit difficult for her, but she settled in after several days and was relatively comfortable for the second half of the trip. This was such a relief! We’re hopeful that future trips there will be easier now that we’ve “broken the ice.”
July should be routine for us. It’ll be extremely hot outside, so we’ll eat lots of popsicles and likely only play outside if it involves the sprinklers! As I typically do during the summer months, I’ve avoided putting meals on my menu that must be prepared in the oven. This is because meals that require minimal cooking (like chicken wraps) or utilize the air fryer or stovetop add less heat to the house. Here are the meals we plan to eat this month (you can see past menus here).
Days 1-7
- Southwest cheesy chicken sandwiches, fresh veggies with ranch dip
- Smothered chicken breasts, mashed potatoes, green beans
- Chef salad
- Chicken Florentine skillet
- Soft tacos, corn
- Air fryer steak bites, fresh veggies with ranch dip
- French bread pizzas, Caesar salad
Days 8-14
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Spicy lemon chicken, seasoned rice, glazed carrots
- Taco salad
- Creamy lemon pepper chicken pasta, sugar snap peas
- Nachos, corn
- Slow cooker bourbon chicken over rice, green beans
Days 15-21
- Chicken club wraps, air fryer zucchini chips
- Sausage and rice skillet, steamed broccoli
- Creamy Caesar chicken pasta, green beans
- Black bean and sweet potato burritos
- Grilled chicken fingers, roasted summer vegetables
Days 22-31
- Cheeseburgers, slow cooker baked beans, fresh veggies with ranch dip
- Lemon pepper chicken, buttered noodles, garden salad
- Chef salad
- Creamy Cajun chicken pasta, green beans
- Pico de gallo tilapia, black beans, seasoned rice
- Peach balsamic chicken, steamed carrots
- Chicken lettuce wraps
- Stovetop lasagna, green beans
- Breakfast for dinner
