We’re now in the month of June. I don’t know about you, but I have a difficult time remembering what day and month it is! This year has not looked anything like we expected. In fact, our plans were to be in Colorado right now, visiting my family and celebrating my parents’ 40th anniversary. We’re at home instead, not sure what the summer will look like.
However, we’re healthy and my husband still has a job. We’re focusing on these blessings instead of being frustrated by the things we can’t safely do. One thing we’re grateful for is that grocery stores have most items in stock again. This makes planning menus, like this one for June, much easier!
At the start of each month I plan our dinner menu for the coming weeks (you can see our past menus here). It takes a bit of work to do this but it works for me because it means I don’t have to find time to meal plan each week and I can save money by making bulk purchases of the foods we’ll use several times.
I only include dinners on our menus because we keep things simple for breakfast and lunch. For breakfast, we typically eat things like oatmeal, scrambled eggs and toast, smoothies, or homemade muffins. For lunch, we typically eat dinner leftovers or simple things like almond butter sandwiches, cheese broccoli soup, or homemade macaroni and cheese.
Here are the dinners I plan to make during June 2020.
Days 1-7
- Salad, breadsticks
- Chicken Alfredo, green beans
- Sausage and pepper skillet, seasoned rice
- Nachos, corn with red and green bell pepper
- Creamy ground turkey and noodle casserole, carrots
- Meatloaf parmesan, green beans
- Air fryer chicken fingers, broccoli
Days 8-14
- Baked ziti, green beans
- Cheeseburger quesadillas, veggie sticks with dip
- Roast chicken, seasoned rice, peas
- Chicken and noodles, carrots
- Soft tacos, corn with red and green bell pepper
- Creamy garlic meatballs, green beans
- Southwest cheesy chicken sandwiches, carrots
Days 15-21
- Salad, breadsticks
- Chicken Alfredo, green beans
- Cheesy sausage and rice skillet, broccoli
- Mexican rice bake, tortilla chips
- Turkey Normandy, carrots
- Chicken parmesan, green beans
- Bourbon chicken over rice, broccoli
Days 22-30
- Spaghetti, green beans
- Chicken quesadillas, veggie sticks with dip
- Cilantro lime chicken with riced cauliflower, black beans
- Chicken noodle casserole, peas
- Burrito bowls
- Hamburger gravy over noodles, green beans
- Grilled chicken sandwiches, carrots
- Breakfast for dinner
- Lemon pepper salmon, rice, broccoli

We still have a hard time buying meat and finding some specific brands/ products we like but overall I definitely agre it is much easier to menu plan now that we don’t have to worry about what is and is not there. Very tasty menu.

There are definitely some things that we can’t find, but overall things are much improved. I plan our meals out like this, but sometimes we end up making something else because we couldn’t get a particular item. It helps me learn to be flexible. 🙂

My days and weeks run together as well – having a menu made up ahead really does help!
Stores in my area are still limiting quantities of canned goods and meats, so I’m grateful I have been able to have a well-stocked pantry and freezer to make menu planning easier.

This pandemic has definitely made me glad we keep a supply of emergency food and has made me more committed to keeping our pantry and freezer stocked!

The monthly approach doesn’t seem to be common. I’ve tried lots of different ways, and this is what works for us!
