June 2022 Dinner Menu

Another busy month has nearly passed. Summer is beginning, which doesn’t mean a whole lot for my family for a couple of reasons. First, it’s already very hot around here. Second, we’ve been using a year-round approach to our homeschooling. This means we have school during the summer (the lack of a large summer break is offset by frequent, shorter breaks throughout the whole year).

What’s for dinner in my house during June 2022? Meals include BBQ Chicken Salad, Beefy Tortellini Skillet, and Air Fryer Empanadas.

We don’t have any big trips planned for the next couple of months, which is fine with me because we’ve had a busy spring! However, here on the Texas Gulf Coast, summer means hurricane season. We never know when we may have to pack up and leave for an impromptu trip away from the coast. I’ll soon be checking and restocking our disaster preparedness supplies.

Here are the tasty meals we plan to eat this month (if you’d like to see past menus, you can view them here).

Days 1-7

  • Sonoma chicken salad sandwiches, fresh veggies with ranch dip

Sonoma Chicken Salad

  • Soft tacos, corn
  • Air fryer BBQ chicken skewers, garden salad
  • Cheesy sausage and pepper pasta, green beans

  • Grilled chicken sandwiches, air fryer asparagus

Air Fryer Asparagus

  • Creamy skillet noodles with ham and mixed veggies
  • Shepherd’s pie

Days 8-14

  • BBQ chicken salad

  • Air fryer steak bites, fresh veggies with ranch dip

  • Penne in pesto Alfredo sauce, green beans
  • Hamburgers, garden salad
  • Creamy Cajun chicken pasta, sugar snap peas

  • Pico de gallo tilapia, seasoned rice, black beans

Days 15-21

  • Chef salad
  • One-pot chicken and rice, steamed broccoli

  • Bean and cheese burritos, corn
  • Spaghetti with meat sauce, garden salad
  • Pork ribs, fresh veggies with ranch dip
  • Air fryer pizza puffs, green beans
  • Quick and tangy beef stir-fry, basmati rice

Days 22-30

  • Taco salad
  • Air fryer chicken cutlets, fresh veggies with ranch dip
  • Chicken Florentine skillet

  • Air fryer empanadas, corn
  • Grilled chicken tenders, garden salad
  • Beefy tortellini skillet, green beans
  • Chicken drumsticks, sweet potato fries, garden salad
  • Chicken lettuce wraps

  • Breakfast for dinner

    You are so wise to plan for the month. We eat differently in the summer and I find summer menus challenging.

      The monthly approach works well for my family. However, other approaches work for other families. It’s all about finding what works best for you!

    I love how you plan for the entire month. That’s such a great idea! I have five kids at home and one on the way. This would make meals so much easier for me. That Cajun Chicken Pasta looks fabulous, as does the Cheesy Sausage and Peppers! My kids love pasta dishes. Do you grocery shop once a month, too?

      I’ve tried a lot of menu planning approaches over the years, and this is the one that works for us currently!
      I do not grocery shop once a month. I get groceries each week. I don’t have time to sit and menu plan each week, so I just do that part once each month. Sometimes something on the menu will change because a particular food item is unavailable or we have an unexpected visitor. However, we’re usually able to stick closely to the plan.
