We had a lovely visit from some family members last month. It was so nice to catch up! A good portion of the rest of our time was spent completing schoolwork. This is not unusual because we do take a year-round approach to homeschooling. However, we have extra to do because we missed several weeks in the fall while we were moving.
We’ll continue wrapping up school after taking a brief break at the start of June. We are traveling to visit family in Colorado. I’m excited for my girls to get to spend some time with their cousins and for me to have time with my sister and parents. Because of this trip, our menu only contains dinners for about 3 weeks of the month. Here are those dinners (you can view past menus here).

- Cheesy sausage and pepper pasta, green beans
- Bourbon chicken over rice, steamed broccoli
- Beefy tortellini skillet, glazed carrots
- One-pot savory chicken and rice, garden salad
