It doesn’t matter if folks are age 2 or 92, popsicles seem to be a big hit during the hot summer months! We’re in the midst of these hot months, so it’s no surprise that my girls have been asking for popsicles for snack.
It would be easiest to grab a box of these while grocery shopping, but popsicles made with real fruit tend to be pricy. For obvious reasons, I prefer those made with real fruit, so I’ve been making our own. These have been our favorites so far.
Ingredients
- 2 cups fresh or frozen berries (I’ve been using strawberries and blueberries)
- 2 containers (6 oz. each) lemon yogurt
- A sprinkle of sugar or drizzle of honey
Instructions
Place the berries into a food processor or blender. Add the yogurt and sugar or honey. Process until the mixture is smooth.
Fill the compartments of popsicle molds to the top. Put the popsicle sticks/covers in place and freeze for at least 3 hours. Yield: 6 popsicles.
Notes
Lemon and berries taste great together! These popsicles are a little tart, a little sweet, and a lot of delicious. My kids love that they taste yummy and are fun to eat. I love that my kids are eating a little extra fruit! If you feed these to young kids, keep in mind that the berries are dark in color and they will get everywhere as the popsicles melt. Consider using bibs or eating them outdoors.
Even though it would be easiest to purchase premade popsicles at the store, it really isn’t that difficult to make them at home. You can make them out of a variety of fruits and yogurts. You can also integrate fruit juices or coconut water. I’m excited to try something with tropical fruits (such as pineapple and mango) next!
If you don’t have popsicle molds, you can make these using small paper cups and wooden popsicle sticks. Simply fill the paper cups 3/4 full and cover each with a little aluminum foil (crimp the foil around the edges of each cup to hold it in place). Poke a popsicle stick through the foil into the center of each cup. Freeze for at least 3 hours. Peel away the paper cup before eating.

These look so yummy! What a good flavor combination. My only question-have you found lemon yogurt that doesn’t have sugar? I haven’t purchased flavored yogurt in a very long time because even the small cups often have several grams of sugar-at least the kinds that I’ve checked. Is there a particular brand that you’ve found is good?

I don’t think I’ve ever seen individual cups of flavored yogurt that didn’t contain a lot of sugar, AnneMarie. I generally don’t buy them (not just because of the sugar, but because of the cost). However, they are so convenient for a recipe like this!
If you want to cut down on the sugar, I suggest using plain yogurt or Greek yogurt that is vanilla flavored (I can find varieties of this here that are pretty low in sugar). You can then add lemon juice and lemon zest to give the popsicles a bit of lemon flavor.
