Last month’s menu was helpful to us for about half the month. Then we lost power and running water in the 2021 Texas Freeze. Once these services got back online, it took a week or so for grocery stores to get a variety of foods back in stock. I’m hoping we’re able to use this menu for the entire month!
At the beginning of each month I take some time to write out a dinner menu for the coming weeks (you can see past menus here). This is the menu planning approach that seems to work best for me. I like that I don’t have to find time to menu plan each week and I’m sometimes able to save a little money by buying bulk quantities of the items that I’ll use several times. I don’t include breakfast and lunch on our menus because we keep things simple for these meals. For breakfast, we typically eat things like oatmeal, homemade muffins, or scrambled eggs with toast. For lunch, we typically eat dinner leftovers or easy-to-prepare items like almond butter sandwiches.
Here are the tasty dinners we plan to eat this month.
Days 1-7
- Taco salad
- Smoked sausage, seasoned rice, green beans
- BBQ chicken sandwiches, veggie sticks
- Creamy ground turkey and noodle bake, green beans
- Beef fajitas, corn with red and green bell pepper
- Chicken wraps, veggie sticks
- Sloppy Joe macaroni and cheese, sugar snap peas
Days 8-14
- Chef’s salad, breadsticks
- Pork chops, rice pilaf, green beans
- Grilled chicken sandwiches, veggie sticks
- Mexican rice bake, tortilla chips
- Turkey bacon Swiss wraps, veggie sticks
- Spaghetti and meat sauce, green beans
- Hamburger gravy over noodles, asparagus
Days 15-21
- Taco salad
- Ranch chicken and veggies sheet pan
- Hamburgers, veggie sticks
- Chicken Alfredo penne, green beans
- Soft tacos, corn with red and green bell pepper
- Cheesy chicken and broccoli rice
- Bean and cheese quesadillas, veggie sticks
Days 22-31
- Chef’s salad, garlic toast
- Cheesy sausage and rice skillet
- Burrito bowls
- Chicken lettuce wraps
- Philly cheesesteak sandwiches, green beans
- Tortellini tomato soup (with spinach tortellini), breadsticks
- One-pot savory chicken and rice, carrots
- Breakfast burritos
- Grilled cheese sandwiches, tomato soup
- Chicken club wraps, veggie sticks

I notice Green beans are an every other day almost I know I can change that myself but would like some ideas for other vegetables besides that and sticks. Chicken is very big on this meal plan I’m not a chicken person so I guess I will have to change that out too. I will see if pork or beef fit the receipes

I’ve actually only listed green beans on this menu about twice each week. I’ve included other veggies such as broccoli, asparagus, and sugar snap peas. The Ranch Chicken and Veggies Sheet Pan and the Chicken Lettuce Wraps both include a number of veggies.
As far as the veggie sticks go, I include a wide variety of veggies including carrots, broccoli, bell pepper, and cucumber. I suppose I should use a better term than “sticks” given these are actually sliced or chopped fresh veggies (I’ll be sure to do this next month).
Regarding the chicken, yes, I serve a lot of it. I try to limit our intake of both pork and beef because of the possible health risks associated with red meat consumption. Chicken is also cheap compared to beef, which is helpful in staying within my grocery budget!
