We’re so excited for this month! In a couple of weeks, we will visit with my sister and her kids for the first time in three years! We are staying in a vacation home for the visit, so we’ll be able to prepare meals just like we would if we were at home.
Our temperatures are climbing steadily. We’re about to be bombarded by tons of tree pollen and we likely won’t have any really cold days until fall. I guess it’s almost time to trade the soups and casseroles for salads and sandwiches! Here’s what we’ll be eating this month.
Days 1-7
- Pizza, side salad
- Homemade macaroni and cheese, veggie sticks with ranch dip
- Taco salad
- Tuscan tortellini skillet, green beans
- Super easy beef and rice casserole, sugar snap peas
- Pico de gallo tilapia, black beans, seasoned rice
- Sausage and potato country casserole, side salad
Days 8-14
- Chicken Florentine pasta skillet
- Cheeseburger quesadillas, sweet potato fries, carrot sticks with ranch dip
- Burrito bowls
- Southwest cheesy chicken sandwiches, fresh veggies with ranch dip
- Minestrone soup
- Chicken parmesan, green beans
- Creamy turkey mushroom spaghetti, steamed broccoli
Days 15-21
- Chicken alfredo, green beans
- Black bean and veggie quesadillas
- Creamy ground turkey and noodle casserole, side salad
- Grilled cheese sandwiches, tomato soup
- Chicken drumsticks, fresh veggies with ranch dip
- Nacho bar
- Spaghetti with meat sauce, green beans
Days 22-31
- Hamburgers, fresh veggies with ranch dip
- Fried fish, hushpuppies, salad
- Tuscan chicken orzo, sugar snap peas
- Philly cheese meatloaf, fresh veggies with ranch dip
- Chef salad
- Breakfast for dinner
- Creamy Cajun chicken pasta, steamed broccoli
- Air fryer chicken fingers, side salad
- Sloppy Joe sandwiches, fresh veggies with ranch dip
