I noted last month that our cooler temperatures were about to go away. I was sure right! I know many areas of the country had snow this past week, but we’ve had temperatures in the 80s. I’m not ready for the heat, but it’s here now and will be until the fall. Despite the early heat, we are enjoying watching the flowers start to bloom.
This month will start our transition away from winter favorites (soups, casseroles, etc.) to spring/summer favorites (sandwiches, salads, etc.). As I’ve noted before, I try to avoid using the oven during the warm months because it adds so much heat to the house. Sadly, one thing I won’t be using in the coming weeks is our air fryer. It was recalled, so I’m waiting for the company to send a replacement. If you have a Cosori brand air fryer, be sure to check and see if it is among the recalled models. Here are the dinners we hope to eat this month (you can see past menus here).
Days 1-7
- Creamy mushroom pasta, green beans
- One-pot savory chicken and rice, fresh veggies with ranch dip
- Seasoned steak strips, seasoned rice, glazed carrots
- Creamy Cajun chicken pasta, side salad
- Chicken wraps, fresh veggies with ranch dip
- Mexican rice bake, tortilla chips
- Spaghetti with meat marinara, green beans
Days 8-14
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Lemon pepper chicken, buttered noodles, steamed broccoli
- Cheesy sausage and pepper skillet, green beans
- Soft tacos, corn
- Italian tomato macaroni and cheese, side salad
- Beef tomato rice skillet, sugar snap peas
- Cheeseburger macaroni, fresh veggies with ranch dip
Days 15-21
- French bread pizzas, side salad
- Smoked beef sausage, seasoned rice, green beans
- Southwest cheesy chicken sandwiches, fresh veggies with ranch dip
- Chicken Alfredo, steamed broccoli
- Burrito bowls
- Easy cheesy stroganoff, glazed carrots
- Grilled cheese, tomato soup
Days 22-31
- Cheddar bacon chicken fingers, fresh veggies with ranch dip
- Grilled chicken sandwiches, side salad
- Creamy garlic meatballs over egg noodles, green beans
- Chef salad
- Chicken Florentine skillet
- Pico de gallo chicken, seasoned rice, black beans
- Spaghetti with meat marinara, green beans
- Easy tortellini tomato soup, garlic bread
- Chicken quesadillas, fresh veggies with ranch dip
- Breakfast for dinner
