I feel like March sneaked up on us! Our February started well. My girls had a wonderful Valentine’s Day party with their homeschool group. Unfortunately, we ended the month with a round of runny noses and sore throats. The illness was pretty mild, though, for which we are thankful.

Our weather is starting to warm, so we are transitioning away from menus full of winter favorites like soups and casseroles. I’m also trying something new this month involving leftovers. In recent months, we haven’t been able to eat all our leftovers. I hate wasting food, so I want to make sure these are used up. My full schedule makes it challenging to find time to prepare dinner every night, so I’ve come up with what will (hopefully) be a win-win solution. One night each week we will simply pull all the leftovers from the fridge and make dinner of them. Though leftovers aren’t super popular with my husband and kids, this is a great solution because it prevents us from wasting food and it gives me a bit of a breather because I don’t have to prepare dinner on leftover night.
As I’ve noted before, I don’t necessarily prepare the meals in the order that they appear below. I assign meals to a given week, and I move those meals around within that week depending on our schedule (preparing easier meals on busy days and more complicated meals on less busy days). Here are the meals we plan to eat this March (you can see past menus here).
Days 1-7
- One-pot chicken and sausage bog, steamed broccoli
- Grilled chicken strips, fresh veggies with ranch dip
- Nachos
- Chicken noodle casserole, roasted carrots
- Sesame ginger chicken, basmati rice, green beans
- Leftovers
Days 8-14
- Air fryer steak bites, fresh veggies with ranch dip
- Soft tacos, corn
- Creamy ground turkey and noodle casserole, green beans
- Philly cheese sandwiches, garden salad
- Panang chicken curry with bell peppers, basmati rice
- Leftovers
Days 15-21
- Chicken wings, fresh veggies with ranch dip
- Pico de gallo tilapia, black beans, seasoned rice
- Sausage and potato country casserole, green beans
- Easy tortellini tomato soup, garlic bread
- Pepper steak stir fry with veggies, basmati rice
- Leftovers
Days 22-31
- Creamy Caesar chicken pasta, green beans
- Lemon pepper chicken, buttered noodles, roasted carrots
- Chicken fajitas, corn
- Super easy beef and rice casserole, Caesar salad
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Sweet and sour chicken and veggies, basmati rice
- Easy French dip sandwiches, sweet potato fries
- Chicken wings, fresh veggies with ranch dip
- Burrito bowls
