There are several tasks I intended to accomplish during February that I didn’t even have time to think about, much less complete! Nothing unexpected happened that occupied my time; the tasks of everyday life were simply enough to keep me busy.

March will also be very busy for us because we have family coming to visit both in the middle of the month and at the end of the month. These visits, mixed in with our regular school and a few previously scheduled medical and dental visits, will make it an eventful month.
Sadly, our winter has pretty much passed. We’ve been having temps in the 80s. This means I am beginning our transition away from soups and casseroles on the menu to foods that don’t add as much heat to the house (things like one-skillet dinners, salads, and sandwiches). Here are the dinners we plan to eat this month (you can view past menus here).
Days 1-7
- Cheesy garlic chicken wraps, fresh veggies with ranch dip
- Hamburger steaks with mushroom gravy, mashed potatoes, green beans
- Creamy Caesar chicken pasta, roasted broccoli
- Creamy ground turkey and noodle casserole, garden salad
- Mexican rice bake, tortilla chips
- Sausage and root vegetable sheet pan, seasoned rice
- Leftovers
Days 8-14
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Chicken breasts with herb sauce, buttered noodles, green beans
- Cheesy ham chowder
- Creamy garlic meatballs over egg noodles, roasted carrots
- Chicken parmesan with broccoli sheet pan
- Leftovers
Days 15-21
- Grilled chicken sandwiches, fresh veggies with ranch dip
- Smoked sausage, macaroni and cheese, roasted broccoli
- Creamy Cajun chicken pasta, green beans
- Philly cheese meatloaf, garden salad
- Pico de gallo tilapia, black beans, seasoned rice
- Ranch chicken and veggies sheet pan

Days 22-31
- Sloppy Joes, fresh veggies with ranch dip
- Lemon pepper chicken, seasoned rice, garden salad
- Easy cheesy stroganoff, green beans
- Hamburger gravy over mashed potatoes, roasted carrots
- Fish and chips sheet pan

- Creamy chicken orzo skillet
- Sausage stuffed acorn squash
