May 2020 Dinner Menu

The events of this year have been anything but expected! As I look at the title of this post, I have a difficult time believing it is actually May. It is, though, which means it is time for another menu.

What’s for dinner in my house during May 2020? Menu items include creamy garlic meatballs, turkey tetrazzini, and burrito bowls.

Because of the COVID-19 pandemic, stores have had a difficult time keeping some items in stock. Without knowing what I’d be able to get in my grocery orders, I wasn’t able to plan specific meals on last month’s menu. Thus, it was basically a list of options that can be prepared with few ingredients. Stores have more in stock now, though it is typical that I can’t get my preferred brand, size, and/or flavor of a given item. Additionally, some unexpected items (such as yeast and wheat flour) are almost impossible to find. With things being a little bit more predictable, I’m able to plan a tentative menu for the month.

I plan a new dinner menu each month because it saves time (I don’t have to find time to menu plan each week) and it saves money (I can buy bulk quantities of the items we will use multiple times). You can see past menus here. For breakfasts, we eat things like oatmeal, scrambled eggs, smoothies, and cold cereal. For lunches, we eat things like homemade macaroni and cheese, avocado egg salad, and almond butter sandwiches.

Here are the dinners I plan to make during the month of May 2020.

Days 1-7

  • Spaghetti with meat sauce, green beans
  • Salad, breadsticks
  • Roast chicken, potato wedges, carrot sticks
  • Sausage and rice skillet, broccoli Sausage and Rice Skillet on May 2020 menu

  • Grilled cheese sandwiches, tomato soup, carrot sticks
  • Shepherd’s pie, rolls

Days 8-14

  • Chicken Alfredo, green beans
  • Burrito bowls
  • Crispy ranch chicken, carrot sticks

Days 15-21

  • Roast chicken, seasoned rice, carrot sticks
  • Slow cooker red beans and rice

  • Creamy garlic meatballs over rice, green beans

Days 22-31

  • Creamy pesto tortellini, green beans
  • Nachos, corn with red and green bell pepper
  • Ham, mashed potatoes and gravy, carrot sticks

  • Turkey tetrazzini, green beans
  • Chicken quesadillas, carrot sticks
  • Breakfast for dinner
  • Chicken and noodles, rolls
  • Meatloaf, mashed potatoes, green beans

    These are some great ideas for my menu. I’ve never been a menu person until COVID and it has been amazingly helpful! Between activities and my husband’s traveling schedule, I’d make dinner 3-4 times/week but then it was leftovers. Now we have a 7 day menu and shop every few days for our ingredients. Leftover night is every 4th night. I won’t ever go back!

    Good for you for planning your meals a month in advance. I do a week at a time and thought I was doing good! 🙂 Your Spicy Lemon Chicken and Tortellini sklllet sound delicious! I am going to save them to give them a try. Thanks for sharing.

      I don’t feel that one menu planning approach is any better than another, Laurie. Different things work for different families, so it really comes down to what works for you.
      We enjoy both of those dishes!
