May 2021 Dinner Menu

I couldn’t believe it when I looked at the calendar a couple of days ago and saw that it’s almost May! Time really does feel like it passes quickly. As we brace ourselves for hot weather (it arrives early here on the Texas Gulf Coast), I’m getting us set up with a new dinner menu.

What’s for dinner in my house during May 2021? Menu items include Chicken Club Wraps, Pico de Gallo Chicken, and Sweet and Sour Meatballs.

At the beginning of each new month, I plan out our meals for the coming weeks. Though this takes a bit of time, I like planning an entire month’s worth of meals because it means I don’t have to menu plan each week (you can see many of my past menus here). Additionally, sometimes I can save a little money on groceries by making bulk purchases of the items I’ll use several times. I only make a dinner menu because we keep things simple for breakfast and lunch. For breakfast, we typically eat homemade muffins (namely these Pumpkin Chocolate Chip ones), oatmeal, or scrambled eggs and toast. For lunch, we typically eat dinner leftovers or simple things like almond butter sandwiches.

Here are the yummy dinners we plan to eat during May 2021.

Days 1-7

  • Chef salad, garlic bread
  • Slider bar, sliced fresh veggies

  • Chicken Alfredo pasta, green beans
  • Mexican rice bake, tortilla chips

  • Creamy garlic meatballs over noodles, sugar snap peas

  • Cheddar bacon chicken fingers, sliced fresh veggies
  • Sausage and tortellini in creamy tomato sauce, green beans

Days 8-14

  • Taco salad
  • Chicken club wraps, sliced fresh veggies
  • Cheesy sausage and pepper pasta

  • Nachos, corn with red and green bell pepper
  • Chicken and noodles, side salad
  • Smoked beef sausage, seasoned rice, green beans
  • Slow cooker southwestern chicken, rice

Days 15-21

  • Chef salad, garlic bread
  • Grilled chicken sandwiches, sliced fresh veggies
  • Spinach tortellini with squash Alfredo, green beans
  • Chicken quesadillas, corn with red and green bell pepper
  • Shepherd’s pie, side salad
  • Lemon pepper salmon, seasoned rice, air fryer asparagus

Air Fryer Asparagus

  • Monterey penne, sliced fresh veggies

Days 22-31

  • Taco salad
  • Philly cheesesteak sandwiches, sliced fresh veggies
  • Spaghetti with meat marinara, green beans
  • Soft tacos, corn with red and green bell pepper
  • Easy cheesy stroganoff, peas

  • Three cheese macaroni and cheese, sliced fresh veggies
  • Chicken and wild rice casserole, green beans
  • Breakfast for dinner
  • Pico de gallo chicken, side salad

    This is a discipline I have always admired from afar. 😁 And now that I cook for 2 most of the time, I am learning to steward those leftovers!

      I remember that from before we had kids! We ate a lot of leftovers. Now, we’re lucky if we have any leftovers!
