April was a busy month for us. May promises to be the same. We’ve spent more time visiting with extended family members this spring than we have in years! It’s been wonderful.
We’ve been getting outside a lot while the weather is warm but not yet blazing hot. It’s always nice to see the trees covered in blossoms and chat with neighbors who are out completing yardwork.
Here are the dinners we plan to eat during the coming month (if you’d like to see past menus, you can view them here).
Days 1-7
- Taco salad
- Spicy lemon chicken, seasoned rice, green beans
- Creamy Tuscan sausage pasta
- Chicken drumsticks, fresh veggies with ranch dip
- Air fryer chimichangas, corn
- Creamy ground turkey and noodle casserole, steamed broccoli
- Grilled cheese sandwiches, tomato soup, garden salad
Days 8-14
- Air fryer steak bites, fresh veggies with ranch dip
- Sun-dried tomato and white bean gnocchi
- BBQ chicken salad
- Soft tacos, corn
- Cheesy sausage and pepper pasta, green beans
- Chicken sandwiches, fresh veggies with ranch dip
- Creamy Cajun chicken pasta, garden salad
Days 15-21
- Creamy garlic meatballs, green beans
- Chef salad
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Butter chicken, rice, steamed broccoli
- Southwest cheesy chicken sandwiches, corn
- Mexican rice bake, tortilla chips
Days 22-31
- Lemon pepper chicken, seasoned rice, sugar snap peas
- Cheeseburger macaroni, fresh veggies with ranch dip
- Garlic butter salmon, creamy orzo with spinach and mushrooms
- Bourbon chicken over rice, green beans
- Spinach enchiladas, corn
- Chicken club wraps, fresh veggies with ranch dip
- Tortellini tomato soup, garlic bread
- Philly cheesesteak sandwiches, garden salad
- Breakfast for dinner
