Last month passed pretty uneventfully. Thankfully, we were able to view the eclipse! We had a break in the clouds for long enough to see it. My girls thought it was neat. We’ve spent a lot of time outside enjoying the mild spring weather. We’re never ready for the heat of summer, so we will enjoy this while it lasts!
This coming month we are expecting a visit from some family members. We’re excited to see them (especially the youngest, who was born about six months ago). We’ll also be trying to iron out our plans for the summer. Here are the dinners we’ll be eating this month (you can see past menus here).
Days 1-7
- Chef salad
- Creamy Cajun chicken pasta
- Bourbon chicken, basmati rice, green beans

Days 15-21
- Peach balsamic chicken, basmati rice, green beans
- Easy French dip sandwiches, fresh veggies with ranch dip
- Air fryer BBQ chicken skewers, seasoned rice
- Spaghetti and meatballs, Caesar salad
- Soft tacos, corn
Days 22-31
- Creamy lemon pepper chicken skillet, green beans
- Pico de gallo tilapia, Mexican rice, black beans
- Sonoma chicken salad sandwiches, fresh veggies with ranch dip
- Air fryer chicken tenders, sweet potato fries
- Creamy garlic meatballs over egg noodles, steamed broccoli
