Last month didn’t end up being as uneventful as we anticipated. Early in the month, we learned that we had family coming for a visit at the end of the month. This was welcome news, but the colds that two of my daughters and I came down with towards the end of the month were not welcome. Thankfully, we got well in a few days, so the arrival of family was not delayed for long!

We will begin May by visiting with our family members who are in town. After spending time with them, we will try to wrap up the bulk of our schoolwork. For several years we have used a year-round approach to our homeschooling. This year we are doing a modified version of this. We will wrap up our materials and take a break from subjects that my girls know well and are unlikely to forget (e.g., grammar, reading). However, we will continue doing work a few days a week for subjects that are more challenging for them (e.g., math, spelling).
While we’re wrapping up this schoolwork, we will be spending a lot of time outdoors. We will enjoy walks and playgrounds while the weather is still relatively mild. Here are the meals we plan to eat as we do all of this (you can see past menus here).
Days 1-7
- Chef salad
- Cheeseburgers, fresh veggies with ranch dip
- Air fryer southern fried chicken, macaroni and cheese, green beans
- Taco bar
- Ranch chicken and veggies sheet pan dinner

Days 8-14

- Slow cooker bourbon chicken, basmati rice, green beans

Days 15-21
- Chicken wraps, fresh veggies with ranch dip
- Air fryer steak bites, Caesar salad
- Chicken fajitas
- Lemon pepper chicken, buttered noodles, green beans
- Chicken and sausage bog, roasted carrots

Days 22-31
- Cheeseburger quesadillas, fresh veggies with ranch dip
- Air fryer BBQ chicken skewers, seasoned rice
- Nachos, corn
- Smoked sausage, cheesy rotini, steamed broccoli
- Creamy Cajun chicken pasta, garden salad
- Leftovers
- Everything seasoning crusted cod, rice pilaf, green beans
- Build-your-own French bread pizza, Caesar salad
