It feels like October sped by so quickly! It’s almost November, which means we need a new dinner menu.
I’ve been planning a new menu at the start of each month (you can see past menus here). Having an entire month of dinners planned is useful because it saves time (I don’t have to spend time planning meals each week) and it saves money (if I know I am going to use a particular food several times, then I can purchase a bulk quantity of it).
I only plan dinners on our menu because we keep breakfast and lunch very simple. For breakfast, we’ll eat things like oatmeal, smoothies, cold cereal, or cheesy baked egg in toast. For lunch, we’ll eat things like avocado egg salad, almond butter sandwiches, and homemade macaroni and cheese.
Here are the tasty dinners we will eat during November 2019.
Days 1-7
- Creamy ground turkey and noodle casserole, green beans
- Salad, cheesy bread with marinara dipping sauce
- Soft tacos, corn with red and green bell peppers
- Spaghetti with meat marinara, green beans
- Curry tortellini soup, rolls
- Autumn chicken sheet pan dinner
- Savory chicken spaghetti, carrots
Days 8-14
- Chicken noodle casserole, green beans
- Minestrone soup, rolls
- Mexican lasagna, corn with red and green bell peppers
- Chicken Alfredo, green beans
- Ranch chicken and veggies sheet pan dinner
- Autumn sausage casserole, sugar snap peas
- Cashew chicken casserole, carrots
Days 15-21
- Turkey Normandy, peas
- Salad, tomato soup
- Nachos, corn with red and green bell pepper
- Italian penne bake, green beans
- Grilled chicken nuggets, macaroni and cheese, carrots
- Sloppy joe veggie casserole
- Cider-glazed chicken, seasoned rice, green beans
Days 22-30
(Thanksgiving is the 28th. We will have company November 26th-December 4th.)
- Philly cheesesteak casserole, carrots
- Refried bean soup, tortilla chips
- Enchilada bake with hidden veggie, corn with red and green bell peppers
- Chicken Alfredo, green beans
- King Ranch chicken casserole, peas
- Scalloped potatoes and ham, carrots
- Turkey, sweet potatoes, macaroni and cheese, green beans, etc. (Thanksgiving dinner)
- Thanksgiving leftovers
- Turkey and wild rice soup (using leftover turkey), rolls

Looks like a wonderful menu! I’m not nearly this organized. For the first time in 20 years I will not be cooking Thanksgiving dinner…we’ll be visiting family!
