We’re about to turn the calendar to November. I’m not sure whether to be shocked because this past year has passed so quickly or to rejoice because we are nearing the end of 2020, a year that has been characterized by chaos and challenges. Whichever I choose, it’s time for a new dinner menu.
At the beginning of each month, I sit down and plan out our dinners for the next four weeks (you can see past menus here). This takes a little time and effort, but it is worth it because it saves me time (I don’t have to menu plan each week) and money (I can purchase bulk quantities of the foods we’ll use several times).
I only include dinners on our menus because we keep things simple for breakfast and lunch. Most of the time we eat leftovers for lunch. If we don’t have leftovers, we’ll eat things like peanut butter sandwiches, homemade macaroni and cheese, or avocado egg salad. For breakfast, we typically eat homemade muffins, scrambled eggs with toast, yogurt with fruit, or oatmeal.
Here are the delicious meals we will be eating this November.
Days 1-7
- Taco salad
- Honey mustard chicken, seasoned rice, green beans
- Easy cheesy stroganoff, carrots
- Salisbury meatballs, mashed potatoes, green beans
- Chicken and broccoli Alfredo spaghetti squash casserole
- Chicken soft tacos, corn with red and green bell pepper
- Slow cooker creamy spinach tortellini soup
Days 8-14
- Chef’s salad, breadsticks
- One-pot savory chicken and rice, green beans
- Smoked sausage and root vegetable sheet pan
- Chicken noodle casserole, carrots
- Chicken quesadillas, corn with red and green bell pepper
- Creamy ground turkey and noodle casserole, green beans
- Cheese and spinach ravioli in butternut squash Alfredo sauce, green beans
Days 15-21
- Apple cranberry walnut salad, crescent rolls
- Maple-glazed chicken, seasoned rice, acorn squash
- Easy stroganoff casserole, carrots
- Seasoned hamburger steaks, potato wedges, green beans
- Creamy turkey and mushroom spaghetti, carrots
- Taco soup, tortilla chips
- Slow cooker veggie tortellini soup
Days 22-30
(Tentative because we are uncertain of our plans for Thanksgiving.)
- Chef’s salad, breadsticks
- Baked ziti, broccoli
- Smoked sausage, cheesy rice, green beans
- Creamy garlic meatballs over egg noodles, carrots
- Thanksgiving dinner (turkey, macaroni and cheese, sweet potatoes, etc.)
- Leftovers
- Chicken and wild rice casserole, green beans
- Mexican rice bake, tortilla chips
- Breakfast for dinner
As you can see, I’m ready for cozy soups and casseroles. What dinners do you hope to eat this November?
