As I noted last week, we are busy unpacking in our new home. After a month filled with takeout and meals that were thrown together from convenience foods, we’re ready for a normal menu!
Thankfully, our weather has cooled, so we are also ready for fall favorites such as casseroles and soups. Believe it or not, Thanksgiving is later this month! I’m not sure how we got so far into the year (the last couple of months are a bit of a blur). We will have a subdued holiday because we are recovering from the move, but we still have much for which to give thanks.
Here are the dinners we plan to enjoy this month (you can see previous menus here).
Days 1-7
- Peach balsamic chicken, buttered noodles, green beans
- Creamy ground turkey and noodle casserole, fresh veggies with ranch dip
- Soft tacos, corn
- Chicken Florentine skillet
- Slow cooker creamy lemon pepper chicken, basmati rice, honey-glazed carrots
- Grilled chicken Caesar salad
- Tortellini tomato soup, garlic bread
Days 8-14
- Lemon pepper chicken, buttered noodles, sugar snap peas
- Chicken and broccoli Alfredo spaghetti squash casserole
- Cheesy sausage and pepper pasta, green beans
- Slow cooker cranberry BBQ pulled pork, fresh veggies with ranch dip
- Chicken noodle casserole, honey-glazed carrots
- Minestrone soup
- Country chicken and veggies over biscuits
Days 15-21
- Creamy garlic meatballs over egg noodles, green beans
- Taco soup
- Beefy tortellini skillet, steamed broccoli
- Slow cooker bourbon chicken over rice, fresh veggies with ranch dip
- Sausage and potato country casserole, honey-glazed carrots
- Pizza, Caesar salad
Days 22-30
- Mexican rice bake, tortilla chips
- Thanksgiving dinner
- Thanksgiving leftovers
- Creamy turkey mushroom spaghetti, fresh veggies with ranch dip
- Creamy mushroom pasta, green beans
- Breakfast for dinner

I’m hoping to try that lemon pepper chicken! We aren’t big fans of mushrooms, but they are so healthy that I’m trying to slowly integrate mushrooms into our meals-and that dish looks delicious (we love lemon pepper!). I hope you are able to settle into life and enjoy some normal meals-I totally hear you on being ready for home-cooked meals; we just did a roadtrip/vacation with relatives and after the first couple days of eating at restaurants or doing takeout, we were more than ready to make some homemade meals at our air bnb!

One great thing about that lemon pepper chicken dish is that the mushrooms aren’t overwhelming. Hopefully it’ll be a tasty way to integrate them into your diet.
I always find it a treat to eat out, but then after a few days of it (while on a trip or moving), it does get old!
