October 2020 Dinner Menu

September has passed in a bit of a blur. We listed our house for sale, got it under contract in less than a week, and were able to sign a lease on a lovely house that we will reside in as we work towards our goal of moving closer to family.

What’s for dinner in my house during October 2020? Menu items include Turkey Pot Pie, Beef Stew, and Creamy Veggie Tortellini Soup.

We have the closing on our house and our move into the new place coming up, so I’ve kept my focus on convenient meals as I’ve planned our menu. In fact, the reality is that we will probably skip a couple of meals on the menu in favor of ordering pizza or getting takeout on a couple of the days around our move. However, I’ve included a dinner for each day of the month just in case we need them.

I sit down at the beginning of each month and plan out our meals for the coming weeks (you can see previous menus here). This approach works for me because I don’t have to find time to menu plan each week and I’m sometimes able to save a little money by making bulk purchases of the foods we will use several times.

I don’t specify what we’ll have for breakfast or lunch on our menus because we keep things simple for these meals. For breakfast, we usually eat things like homemade muffins, smoothies, cereal, and oatmeal. For lunch, we usually eat dinner leftovers or easy-to-prepare items such as almond butter sandwiches, homemade macaroni and cheese, avocado egg salad, and grilled cheese sandwiches.

Here’s our tentative dinner plan for October 2020.

Days 1-7

  • Turkey Normandy, green beans
  • Pumpkin chili

Pumpkin Chili

  • Salad, bread sticks
  • Sloppy Joe macaroni and cheese, carrots

Sloppy Joe Macaroni & Cheese

  • Chicken fingers, veggie sticks
  • Savory chicken and rice, green beans

One-Pot Savory Chicken and Rice

  • Grilled cheese sandwiches, tomato soup

Days 8-14

  • Baked ziti, green beans

The Best Baked Ziti

  • Superior chicken noodle soup, rolls

Superior Chicken Noodle Soup

  • Soft tacos, corn with red and green bell pepper
  • Cheesy chicken and broccoli noodles, carrots

Cheesy Chicken and Broccoli Shells

  • Steak bites, garlic bread, veggie sticks
  • Beef sausage, seasoned rice, green beans
  • Chicken club sandwiches, potato wedges, carrots

Days 15-21

  • Chicken noodle casserole, green beans

Chicken Noodle Casserole

  • Beef stew
  • Salad, breadsticks
  • Creamy ground turkey and noodle casserole, carrots

Creamy Ground Turkey and Noodle Casserole

  • Chicken fingers, veggie sticks
  • Cheesy chicken and broccoli rice
  • Turkey avocado BLT sandwiches, carrots

Days 22-31

  • Italian penne bake, green beans

  • Chicken and noodles, rolls
  • Nachos, corn with red and green bell pepper
  • Kentucky hot brown casserole, carrots
  • Beef sausage, seasoned rice, green beans
  • Creamy veggie tortellini soup

Slow Cooker Creamy Veggie Tortellini Soup

  • Breakfast for dinner
  • Chicken wraps, veggie sticks
  • Turkey pot pie
  • Hamburgers, sweet potato fries, peas

In the midst of all the craziness around here I haven’t forgotten that it is now fall. This means I’m craving soups and casseroles. As you can see, there are plenty of these on the menu!

    I am so thrilled to hear that your house got under contract and that you have a new place to move into–and so quickly! What a blessing.

    These meals all sound so good-I’m going to have to try some of these soups when I’m cooking again 🙂

      Yes, we are so pleased! We close this Friday. We’re quite busy (moving with three little ones is not very easy, but we’re getting there). To be honest, we’ve had pizza and gone through the drive thru at restaurants several times this week.
      Take it easy while you can! Get recovered and then there will be plenty of time to cook.
