October 2022 Dinner Menu

October 4, 2022 By Shannon This post may contain affiliate links and this site uses cookies. Click here for details.

I feel like October sprang upon us unexpectedly. We’ve been busy with school and have had family in town for a couple weeks, so we’ve been too distracted to look at the calendar! I guess the weather should have clued me in because we are finally experiencing some cooler temperatures. Our temps are still high during the day, but we are dropping into the 60s during the overnight hours. I’m so grateful for this!

What’s for dinner in my house during October 2022? Meals include Butternut Squash Stuffed Shells, Chicken Noodle Casserole, and Pumpkin Chili.

We’re going to enjoy the temperatures and try to take it easy this month because we know the busy Thanksgiving and Christmas seasons are coming! Here are the meals we will eat as we do this (click here to view past menus).

If things go according to plan, I’ll post the Butternut Squash Chicken Pot Pie recipe.
I made a butternut squash soup a couple of weeks ago for lunch. I took pictures of this, but I haven’t had a chance to post the recipe yet. We’ll see if I get around to it!
