I feel like October sprang upon us unexpectedly. We’ve been busy with school and have had family in town for a couple weeks, so we’ve been too distracted to look at the calendar! I guess the weather should have clued me in because we are finally experiencing some cooler temperatures. Our temps are still high during the day, but we are dropping into the 60s during the overnight hours. I’m so grateful for this!
We’re going to enjoy the temperatures and try to take it easy this month because we know the busy Thanksgiving and Christmas seasons are coming! Here are the meals we will eat as we do this (click here to view past menus).
Days 1-7
- Smothered hamburger steaks, mashed potatoes, green beans
- Ham, macaroni and cheese, julienned beets
- Slow cooker veggie tortellini soup
- Lemon pepper chicken, buttered noodles, fresh veggies with ranch dip
- Beef stew, honey wheat butterhorns
- Chicken noodle casserole, side salad
- Orange chicken, brown rice, fresh veggies with ranch dip
Days 8-14
- Easy cheesy stroganoff, roasted acorn squash
- Chicken club wraps, fresh veggies with ranch dip
- Tortellini tomato soup, garlic bread
- Garlic mushroom chicken, seasoned rice, green beans
- Soft tacos, corn
- Air fryer BBQ chicken skewers, side salad
Days 15-21
- Beefy tortellini skillet, green beans
- Creamy pesto chicken, side salad
- Pumpkin chili
- Citrus herb salmon, roasted potatoes, fresh veggies with ranch dip
- Superior chicken noodle soup
- Grilled cheese, tomato soup
- Butternut squash chicken pot pie
Days 22-31
- Slow cooker beef and broccoli, basmati rice
- Chicken drumsticks, fresh veggies with ranch dip
- Homemade cheeseburger macaroni, honey glazed carrots
- Cilantro lime chicken and rice, black beans
- Butternut squash stuffed shells
- Mexican rice bake, tortilla chips
- Creamy ground turkey and noodle casserole, green beans
- Breakfast for dinner
- Sausage and root vegetable sheet pan

I made a butternut squash soup a couple of weeks ago for lunch. I took pictures of this, but I haven’t had a chance to post the recipe yet. We’ll see if I get around to it!
