Peach Balsamic Chicken

I frequently include Peach Balsamic Chicken on our menus. It’s one of our favorite dinners, so it’s high time I share the recipe here.

With simple ingredients and a few minutes of prep work you can have filling and flavorful Peach Balsamic Chicken.

With this recipe, a few simple ingredients and a few minutes of prep work yield a filling and incredibly flavorful dinner. 

Ingredients

  • 1.5-1.8 lbs. thinly sliced chicken breasts
  • 4 tablespoons butter
  • 1 cup chicken broth
  • 2/3 cup peach preserves
  • 4 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • Several dashes salt and pepper
  • 3 tablespoons corn starch
  • Prepared rice

Instructions

Preheat the oven to 400°F.

In a small saucepan over medium heat, melt the butter. Using a whisk, stir in the broth, peach preserves, balsamic vinegar, minced garlic, salt, pepper, and corn starch. Increase the heat to medium-high and continue heating, stirring frequently, until the sauce begins to bubble and thickens. Remove from the heat.

Place the chicken pieces in the bottom of a lightly greased 9×13-in. baking dish. Pour the sauce over the chicken. Place in the oven and bake for 25 minutes or until the chicken reaches an internal temperature of 165°F. Serve over prepared rice. Yield: 5 servings.

Notes

We love the flavor of the sauce on this chicken! It is both sweet and tangy. Thankfully, this dish doesn’t take long to prepare. Once you make the sauce and pour it over the chicken, you are free to prepare the rice and do other things while the chicken bakes.

I serve this over rice, but it would also go well over noodles or mashed potatoes. I add a veggie on the side (such as a side salad or green beans) to make a delicious and satisfying dinner.
