Pumpkin Chili

Pumpkin melds smoothly with the other savory flavors of this easy-to-prepare chili, yielding a dish with a deliciously rich and complex flavor.

I love having a pot of soup or chili simmering on the stove for dinner when it is chilly outside. We’ve had some pretty cold days recently, so it was the perfect time to try this recipe for Pumpkin Chili.

Ingredients

(Inspired by this recipe.)

  • 1-2 lbs. ground meat (I used a combination of ground beef and ground turkey)
  • 1 medium onion, diced
  • 1 bell pepper, diced (yellow, red, or orange peppers work best for this recipe)
  • 3 cloves garlic, minced
  • 1 can (15 oz.) black beans, drained
  • 1 can (15 oz.) pureed pumpkin
  • 1 can (14.5 oz.) diced tomatoes
  • 3 cups beef broth
  • 1-3 tablespoons chili powder (see note below)
  • 2 teaspoons parsley flakes
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons dried oregano
  • Several dashes salt and pepper

Instructions

In a large pot over medium heat, cook the ground meat until brown; drain. Stir in the onion, bell pepper, and garlic; cook for 5 minutes. Stir in the remaining ingredients. Simmer for 1 hour, stirring occasionally. Yield: 8-10 servings.

Notes

Writing out the instructions for this recipe reminds me why I love chili. It’s so easy to make! You pretty much just toss the ingredients in the pot and let it simmer. In this case, pumpkin is among the ingredients. However, if I hadn’t made the chili, I would not have known it had pumpkin in it. My husband doesn’t like pumpkin, and he had no idea. The flavor of the pumpkin melds well with the other savory flavors of the chili making it rich and complex, but it certainly doesn’t taste like pumpkin.

I initially added just 1 tablespoon of chili powder to the pot. When it was nearly time for dinner, I filled my daughters’ bowls with chili and then added an additional 2 tablespoons of chili powder to the pot. This allowed me to give my girls (ages 5, 3, and 1) mild chili while my husband and I had chili with a bit more flavor.
